Cold sesame noodles.
I haven't found any good places that make cold sesame noodles around South Florida. My favorite local Chinese restaurant doesn't serve this dish. They say it's too much work. So today I've decided to try it myself. After surfing for recipes, I decided to try this one:

2. I have played around with recipes for years, and have never
come to anything that is the perfection of the cold sesame noodles that one can get from the little Chinese takeout places in Manhattan.

And I've never been to any restaurant that has as good sesame noodles, either; not even in Brooklyn.

Before I left New York, I asked my local Chinese restaurant guy, that I'd gotten to know over the years, for his recipe, and he wouldn't give it to me but he said they took a long time to make.

Also, for what it's worth, outside Manhattan I'm not sur3e I've ever found a Chinese restaurant that even knows cold sesame noodles are. I'm sure there are some, and I might have come across one in CT or something,but I came to the conclusion years ago that the real cold sesame noodles are a purely New York thing.

Yeah, there are other cold sesame noodle-like things, including a variety of Thai and other types, but nothing matches the pure perfection that is the New York City small Chinese-takeout restaurant ones.

4. I lived in Manhattan for twenty years.
The best noodles came from a place called Sung Ho Lo in Chelsea, and they'd deliver within eight minutes of a phone call. But the place was sold.

So one day, I saw a place called Chung Ho Lo and it was the same guys. They would open a restaurant, build a huge following, and sell. An Irish guy and a wicked Chinese chef. Some of the best food ever.

Down here in Florida, I've got cold sesame needles from a few places. I always wound up throwing them away. That's why I'm trying this.

7. That doesn't work for me.
That's step one of the recipe I used. I tasted it and it wasn't satisfying.

I was absolutely requiring it to have the peanut and spicy flavor. At the least, that requires the addition of sesame paste, peanut butter, and Hunan chile sauce.

The recipe I linked worked out pretty well, and came close. With a little tweaking, it should get there.
