Pecan, Gorganzola Chicken Wrap...BEST DAMN RAP EVER!

Pecan, Gorganzola Chicken Wrap...BEST DAMN RAP EVER!

Many times I'm left scrounging around the kitchen and fridge to make something to eat...

Sometimes the best things happen when you don't make plans and just wing it. This time I wrote it down before I forgot.

Pecan Chicken Wrap - Makes one Wrap

Ingredients

1/2 Chicken Breast Fillet
2 thin slices of bermuda onion gently chopped
2 T. good Olive Oil
3 Large mushrooms sliced
1 Large Flour Tortilla - or other favorite wrap....
1 tsp Habenaero Hot Sauce
8-10 Shelled Pecan halves (1/4 cup of whole pecans)
2 T of coarse crumbled gorganzola cheese
1 T Brandy
1 T Butter
1/4 tsp. Salt
1 T. Minced Garlic
Grinding of black pepper


Salt and pepper the chicken breast. In a heavy skillet heat the oil on high heat add chicken breast fillet and sear on both sides for two to three minutes. Reduce heat and add the garlic and habenaero sauce. After three minutes add brandy.

Saute chicken breast until some of the garlic just starts to turn dark brown turning frequently and any liquid is reduced and thick. Reduce heat further and add the butter, onions, mushrooms and pecans. Simmer until mushrooms and onions are soft, pecans should just start to darken. Lay the tortilla on top and cover to steam the tortilla until warm and soft. Lay the Tortilla on a warm plate. Remove the chicken breast and chop into coarse chunks simmer the remainder. Lay the chicken in the center of the warm tortilla. Sprinkle the gorganzola onto the chicken. Dump the contents of the skillet onto the tortilla, covering the chicken and gorganzola. Wrap it up and serve with a nice cold glass of water and a glass of rowdy red wine.

The combination of the pecans and gorganzola are distinct flavors that mingle with the chicken which is slightly warm from the hot sauce. Key to the dish is keeping the liquid wet and thick and not overcooking the chicken and veg. Yet caramelizing the garlic and roasting the pecans. Be careful to not burn the garlic but take right close. So you get that strong roasted flavor.

If you like pecans...and gorganzola cheese you will really like this simple easy to make wrap...

Ground turkey, 3/4 cooked in olive oil then removed and drained, pan/wok cleaned and new oil added, chopped garlic and serrano peppers fried for a minute or so, turkey re-added. Then add mache lettuce and goat cheese on an unleavened whole wheat tortilla--good stuff and generally good for you. Also very easy to make, and cheap. :D
