Stovetop Blackberry Cobbler |

Stovetop Blackberry Cobbler
1 quart blackberries
1 cup plus 2 Tablespoons granulated sugar, divided
1/4 cup water
1 cup sifted flour
1 1/3 teaspoons baking powder
1 teaspoon salt
2 Tablespoons shortening
1/2 cup whole milk
In a large saucepan over medium heat, combine the blackberries, 1 cup of the sugar and the water. Heat to boiling.
Meanwhile, in a large mixing bowl, sift together the remaining 2 Tablespoons sugar, the flour, the baking powder, and the salt. Cut in shortening to make coarse crumbs. Lightly mix in milk with a fork to make a soft dough. Drop the dough by Tablespoons into the boiling fruit and simmer, uncovered, for 10 minutes; then cover and simmer another 10 minutes.
Serve hot.
Serves 6

more and bigger berries if we had more rain. Now that berry patch is history, building everywhere around here.
That was one great meadow, rabbits, birds of all kind had a home.
You should taste my drewberry jelly.
Today I saw a coyote in the woods, came up the creek I guess. My dog knew it wasn't another dog.

I'll send you a photo. I always make a few pies in the summer, then give the rest of the berries away and freeze some.
Coyote??? We have foxes here, but Ginger knows to stay away from 'em. :scared:

I didn't think I would see a coyote. We redtail hawks, owls, rabbits in the woods, I love it there.
Near by is a huge city park with bobcats, coyotes, and lots of wildlife, this coyote could have come from there.
The coyote saw us and ran off, poor thing was scared.

I've got a question I put a blacberry bush in 2 or 3 years ago it finally starting to bush out and take hold. How long before I will finally have berries?

I'm gonna try it when the blackberries come in season. Could you substitute Rasberries? I have more of them in my backyard the Blackberries.

We used to pick berries as kids and one of our moms would make us this. It was always a big treat because we would spend what seemed like forever picking them so it was the "prize" at the end.
