I had a need for French Onion soup the other day, so I bought a bunch of Vidalia onions. I didn' get to make the soup that day, so when I was at the store yesterday had the idea of using the French Onion soup to braise a few pieces of beef.
So today I made the soup, let it simmer for about 2 hours, and then browned a piece of arm meat and a cross-section of shin (I wish I could remember what that is called), and tossed them into the simmering soup.
I'll let it go another 2 hours or so, and then see how the soup and the beef turn out.
I think it should be good!

I bought a 10# bag a month ago! yikes, I better get cooking. Your soup sounds wonderful. Will you put the chunk of bread on top, cover it with mozzarella and stick it under the broiler?mmmmmmmmmm

Alton Brown has a really easy recipe. But, instead of Vidalias, I'll use Texas 1015s. ;)
