Do this:
- Cut up 3-4 medium zucchinis, a large onion and 3-4 good-sized tomatoes (sometimes I add carrots).
- Saute about half the zucchini and all of the onion in butter and lots of garlic (2-3 tablespoons of the kind you get in a jar).
-Throw the mixture in a pot and add one can of crushed tomatoes and about 2-3 cups of chicken broth (substitute a good veggie broth, if you like).
- Then, add about a cup of water, the fresh tomatoes and the rest of the zucchini.
- Add spices to taste (basil and thyme bring out the nice veggie flavors). Some salt and pepper works well, too. Be careful about salt if the broth you use has salt in it.
- Bring it all to a boil and then simmer it for 20-30 minutes.
Serve it up. Yummy. It's easy and delicious.

I also made a homemade tomato soup. But the results were not as good. It was my first time with that one.
I like to make and freeze soup over the summer and defrost it in the winter. My next project might be pea soup or some kind of multi-bean concoction.

Unfortunately Gryphon doesn't like it. He says water belongs in a glass and not in his food :rofl:
I make delicious yellow split pea soup. Lentil soup usually turns out good too.
