Hmmmm....Fresh mozzarella, Greek Salads, Spanokopita, Lasagne, Real nachos, quesadillas, Genoa salami...I could go on and on... :D

16. OK! One fabulous recipe coming right up!
1 and 1/2 pounds ground sirloin

1 large onion

1 ripe bell pepper (or green, if you prefer those.)

1 can stewed tomatoes

1 can tomato paste with 1 can water (or 2 cans tomato sauce)

2 cans sliced mushrooms

Various spices: black pepper, garlic, oregano, dash of cinnamon, chili powder, 2 bay leaves.

Brown the meat; add in your chopped onion and bell pepper during this...
Then dump in the tomatoes, the tomato paste or sauce, and the mushrooms.

Add in the spices; I don't measure these..just throw some in!

Stir well. Cover, and cook over low heat for 30 minutes.

Then, uncover, and cook for 30 more minutes.

Serve over your favorite pasta, with your favorite cheeses!

And.....one more thing! ENJOY!

but I make meatballs instead of adding ground meat

2 tbsp. olive oil
1 large onion, chopped
1 stalk celery, chopped
1 green pepper, chopped
1/2 yellow pepper, chopped
5 cloves garlic, minced

1 tbsp. dried basil
1/2 tbsp. dried oregano
1 tbsp. dried parsley
2 tsp. kosher salt
1 tsp. freshly ground black pepper

2 cans (the big cans--28 oz, I think) crushed tomatoes
2 cans (again, the big ones) died tomatoes
2 cups sliced baby portabella mushrooms



I heat up the oil in the big sauce pan and then add my fresh veggies (except the mushrooms), and cook on medium until the onions are translucent.

Then I stir in my herbs and let that cook while I open my cans of tomatoes.

I add the tomatoes and the mushrooms and then I let it simmer on low heat for a few hours.

I make homemade meatballs to go in it.

(I just made this over the weekend.... delicious!)

69. This sounds really good, Peggy! Actually a little like my mother's,
but she adds sausage. And I have often added mushrooms to hers, but I add fresh ones if I think to get them.:-)

Actually, here's my mother's recipe, the only spaghetti sauce I ever knew existed, when I was a kid. I'd prefer just mushrooms, but my SO likes the sausage and meat, and will tolerate the veggies, if they're cut small enough that they just melt into the sauce...:shrug:

My mother's recipe for spaghetti meat sauce:

One large can whole Italian roma tomatoes, broken up, and a smaller can of diced tomatoes

One can tomato paste

1 1/2 lbs. hot Italian sausage, casing removed and broken up, or bought in bulk

1 3/4 lbs. ground beef. I use sirloin or the lowest fat kind I can find.

Two medium onions, chopped fine.

Two peppers, also chopped fine. Green are fine, but I often use a yellow one, my homage to the Iron Chef, LOL!

I add a few cloves of minced fresh garlic (three or four, depending on the size). My mother uses garlic salt.

I also add salt and ground pepper, and either fresh or dried basil and oregano, mostly basil, just a couple of handfuls thrown in, crushed, if it's dried.

And, though my mother's recipe doesn't call for it, I often add a pound of sliced fresh mushrooms, white button or cremini, sauteed in olive oil and seasoned with salt, garlic salt, and cayenne pepper.

First, fry the sausage in a skillet until it's browned. Pour off any grease and then saute the ground beef in the same skillet. I usually add the onions and garlic to this, find it adds flavor.

I have also added a can of tomato sauce to the pot, often the seasoned kind (basil and oregano), since this is a pretty thick sauce.

Then I just add the entire melange to a large dutch oven or pot, on the stove, and heat it to boiling, then turn it down to simmer. Simmer for three hours, COVERED, stirring occasionally.

Serve over your favorite pasta. I prefer linguine. My mother likes thin spaghetti, as does my SO, but this is hearty enough to stand up to the larger pastas, like penne or rigatoni.

50. One of the strangest temptations to me as a vegetarian is biodiesel
It smells faintly of fried chicken or barbeque, so sometimes when I'm driving I'll get an unexpected urge for chicken. The odd thing is I didn't eat chicken even when I ate meat.

71. Baked potatoes would probably be best with this...
With butter, salt and pepper and sour cream. But I've found that sour cream, mixed with Wise green onion dip mix, is just the best on baked potatoes, when I can find it...:9

21. Spring Rolls
Doesn't matter what's in 'em, just wrap and fry baby!

The restaurant around the corner from where I work does prawn spring rolls wrapped in that flossy puffy stuff they use for shrimp crackers in Thai restaurants. It's my own little Nirvana twice a week.

My other all time favorite food was feta cheese wrapped in phyllo dough and deep fried as done by the Turkish restaurant near my old house.

And third is Balkans cheese- it's like feta but saltier. I could eat nothing else.

I'm okay - well, up until yesterday - some idiot drove on the wrong side of the street and hit me head on, did a bunch of damage to my beloved car and really bruised me up. I need to go in tomorrow for some x-rays. Still getting over the shock of just getting hit head-on by this lunatic, but it could have been way worse ... however ... other than that I'm fine. :D

Good steak (strip or ribeye) rubbed with kosher salt, freshly cracked black pepper, and Colman's mustard powder, and then pan-fried in a cast-iron skillet (which achieves the desirable goal of leaving the steak with a crust of about 1/8 inch that's actually cooked, and blood rare in the centre); new potatoes, roasted with olive oil and rosemary; Caesar salad (preferably with fresh dressing...decent recipe here:http://www.culinarycafe.com/Salads/Caesar_Salad_Dressing.html ), French bread, and a good red wine (I'd recommend Bordeaux).

Haven't seen you around much lately...glad to see that things are going well for you, and that you're happy.

I've been doing pretty well, myself (aside from currently being bummed about France losing to the fucking Italians, that is...heh)...took a much-needed vacation to Europe last month, and I'm going back in the fall...a few weeks a year spent in Amsterdam makes living in the US almost bearable :D

Pizza (one of my favorite pizza places near me makes a great five-cheese pizza. I know it's got ricotta in there, and it's fabulous, with or without the red sauce), pasta w/vodka sauce, chicken marsala, good Mexican food (love chimichangas and quesadillas), General Tso's chicken, cinnamon French toast (screw "freedom toast"), pretty much any kind of ice cream/sherbet/sorbet, cakes (the more chocolate the better, and also carrot and cheesecakes), pies, bagels with cream cheese, fried chicken, juicy hamburgers (especially with bleu cheese), and corned beef and pastrami.

I'm probably forgetting a few things there, too :P.

Although sometimes I can find Chineese or Mexican places that make great things that aren't greasy. A good burger and fries, ribs, good sushi, dumplings, jambalaya, and good Italian food. Also, everything is better with good bread.

I could eat oranges all day and never be unhappy. Actually, that's a lie. I get unhappy quite often for reasons not related to food. Forget I brought up that part about "being happy." I just like oranges, okay?! Is that so wrong?

I also dig Mexican food A LOT. Chicken with mole sauce, chipotles, habanero peppers, masa, etc. Yummers.

I eat it with very sharp white cheese (Montgomery Cheddar, Black Diamond, etc.) and Carr's water biscuits with cracked pepper with sides of Granny Smith apple slices, yum.

In my mind there is nothing better than good corned beef on rye. Or almost anything Italian (but no mushrooms....).

I'm good at soups and pasta and veggies, love pizza, often make it using basil pesto. I can do pretty much anything with mushrooms, but my SO hates them, prefers meat, so I'm stuck. I'm not as good with meat, was a vegetarian for a lot of years, but I'm trying. I'm good at any type of lasagna, or baked ziti, prefer mine with eggplant and mushrooms, but can do the meat version, too. And I truly do love cheese, too, as does my little dog...:D

on edit: Here's a recipe that I posted, long ago, for a really good potato soup, with bacon and onions. I got it from my grandmother's friend and have made it many times, and it's always a hit. My picky Dad especially liked it...:-)

There is a creamery here that makes it, and to eat it the day it's made.....YUM!

One of my favorite meals in town is at a place called the Chop House. I don't eat a whole lot of red meat usually, but I indulge there (when I'm out on business and someone else is paying ;)).
We start off with a cold seafood platter appetizer for the table. Lobster claws and tail, Crab Louie, oysters, and shrimp. :9 Then there's the salad with Roquefort dressing. Then an amazingly tender filet mignon with asparagus and cheddar au gratin potatoes.

Ok...now I am hungry :D

65. I have discovered a new favorite food.
I am eating a fresh feta pasta salad that I got from the Kroger deli. The ingredients are penne pasta, canola oil, olive oil, cider vinegar, black olives, parmesan cheese, balsamic vinegar, parsley, garlic, grape tomatoes and feta cheese. Yumm!!

72. Also, for veggies, have you ever tried broccolini?
It's a hybrid of broccoli and Chinese kale, requires less peeling than broccoli, and has a more delicate flavor. It's kind of like broccoli, only with small florets and longer stems. And I have found it in the big supermarkets. I just steam it in the microwave, with a little salted water, in a dish covered with Saran wrap. And then I serve it with a little butter, or salt. This would be a great side dish for your steak dinner... I've found it to be a hit, even with non veggie lovers. :-)
