Dinner thread- what's everybody eating?
I had some lavash, lettuce, cucumber, onion and a tub of hummus lying around, so I'm making wraps. I think I'll throw some black olives, peperoncinis and freshly ground pepper in there as well. I haven't decided if I'm bothering with a side- it's a pretty healthy meal on it's own.

What are you having?

19. Oh yum - a communal brunch sounds divine
That book is awesome. We made her stroganoff last week. Don't ask me what possessed us. It was boiling hot out, so it was Hades-like in our kitchen, but we were craving stroganoff and it is HEAVENLY. We vowed, though - never again until the cooler months! (To be honest, you could omit the seitan; the sauce was so rich and you could just increase the amount of mushrooms.)

I haven't made one thing out of that book that wasn't completely delicious. :9

11. I have about half a dozen basic no-fat meals
Very boring to most, but taken with a glass of california cabernet, not so bad.

Tonight, I've put together a no-fat pasta sauce that is spiced up with Italian seasoning, minced onion and minced garlic (when I'm ambitious I use real onion and garlic sauteed in olive oil). I add soy ground beef and soy Italian sausages (the fake stuff) and simmer.

Not like the old days (pre vegan) when I spent a day and a half preparing an incredible pasta sauce (all kind of real meat). But, then, I had my turn being foolish (and barely got away with it).

Mangia, mangia!

13. Boca brand meatless Italian sausage
In the frozen food section. They have 9% fat, but no saturated fat. It's a one luxury I allow myself. Usually I allow zero fat. Anyway, I microwave and slice one or two into the pasta sauce that will serve about four or five meals.

The fake ground beef is Yves brand "the Good Ground" - zeeeero (as they say down south) fat! ( I say down south because as a math major taking a grad course in DC the prof said "zeeero" - being from the north I never heard it pronounced that way)/

By the way Kraft makes a pretty good fat-free shredded cheddar cheese and mozzarella. try the mozzarella next time. I used to use Kraft fat-free Parmesan, but switched to the mozzarella.

:)

14. no dairy protein in the cheese?
Edited on Tue Jul-11-06 07:00 PM by LeftyMom
I usually put this stuff on my pasta and pizza http://www.galaxyfoods.com/ourbrands/usa/vegan.asp (the parmesean stuff on the right side of the photo.) I've tried Follow Your Heart mozarella, but it's tough to get it to melt.

18. I'll have to try that
I can't get FYH to melt very easily either, even though they say it does. It tastes pretty good, at least, but it seems to mold really quickly (at least for me - I don't eat enough of it at a time).

22. I quit buying it for that reason
I'd never use more than half a brick before it would mold and I'd have to throw it out. I heard a rumor that cheesely from the UK may be getting US distro, and everybody I know who has tried it liked the texture and meltiness much better than FYH.

For that matter, I read that somebody patented a soy based casein substitute a few months ago, so hopefully more good vegan cheeses will be made with that if it works out commercially.

32. no no. The mozzarella is Kraft shredded no-fat
I know what you mean about the block stuff not melting nice (that's putting it mildly). The shredded stuff melts very nicely over a hot pasta dish. Try it. It's in --- the dairy section! (maybe I'm not a pure vegan??)

Thanks for the link - I'll try some.

31. You're mostly right
The correct answer is to drizzle the asparagus spears with lemon juice and olive oil, add a coarse salt and fresh ground black pepper, then pop them in the oven near the top rack for 5-10 mins (in Peggy's case, while the meat rests.) Steamed is good, but this is better, especially for sub-optimal late season asparagus.

I'm such a foodie.

Yes, yes, I know.... but I am trying to cut WAY back on the cheese and if I go cold turkey (so to speak) on the animal proteins I will feel like utter crap, so I am hoping that a less fatty animal protein will help me transition to less animal protein over all.

Plus, they're really yummy. :hide:

44. Speck and double cream brie on a Bagelbread
some oil-cured black olives, some home-made dried beef sausages, and a few slices of goat cheese parmesan.

The speck and double-cream brie, both being rather gourmet, on a $2 per pack Thomas' (of English muffin fame) Bagelbread my seem quaint, but it is really nice sandwich bread, and how I also prefer my PB & j, after all.

And a nice jug table wine to top it.
