damn that looks GOOD!
I'd say any of the options you listed would be excellent, but the sandwich and salad options are probably your best bets...in fact you could make a chicken salad sandwich!
Now I'm hungrier than I was before I opened this thread.

Add a few parts of the chicken to one cup of rice and one can of vegetable broth, heat to boil, turn down to simmer and cover. Simmer about 25 minutes. Served. Mmmmm good.....

Just make a sauce with the above ingredients, cook until thick. Mix the cut-up chicken breast pieces into it at the end, and serve over fluffy cooked white basmati rice. Mmmm!

Here is my (theoretical) recipe...
Take the chicken and strip most of the meat from the bones. Toss the bones in a pot of water. Get yourself 4 or 5 bags of ramen noodles; chicken flavor. Bring to a boil. Add in seasoning packets. Also toss in: Diced green onion and/or regular onion and possibly some mushrooms. After it hits boiling, reduce to a medium low simmer. After a half hour, toss in the chicken meat (which in the interim you should have been dicing..) and let is simmer for another hour or so. Add water if it looks to be getting too thick. Finally, after that is done, return to a boil and toss in the noodle packs. After the noodles cook, let the whole thing simmer for another 15-20 minutes and Voila!
You will most likely wanna sift out the bones...
Although if you start with plain water and cook it for a few days....
