I like them in chinese food or my own-style stir fry (not chinese-I use olive oil and Crystal Hot Sauce).

I like to make egg fu yung. A couple of eggs, some bean sprouts, some diced celery and bell pepper and scallions and a splop of soy sauce. Drop big spoonsful in a hot oiled saute pan. Just takes a few minutes. You could add shrimp, mushrooms, whatever.
