I'm going to eat here more often (du warning)

I made enchiladas today:



There were some corn tortillas left over so I made some chips:



I also took the time to make macaroni salad:



I even had time to make some TV dinners:



I enjoy kitchen time:





Here's to next week's dinners!!

3. I'll try.
I started with chicken breast.
Boiled till cooked through.
Cut, diced and stirred.
Added spices: lime juice, horseradish, jalepenos and their juices,
cumin, chili powder, garlic.
Stir fry above ingredients, set aside.
Grate 12 oz. of cheese, this time colby-jack.
Heat oil on med.
Soften corn tortillas in oil, 5-10 secondes each side.
Drain tortilla, the bathe in green enchilada sauce.
Lay out portion of chicken and sheese.
Roll like a large cigar, place in baking dish.
When dish is full, slather more green enchilada sauce.
Add remainder of cheese, sliced green onion, and black loives.
Bake at 275 for about forty-five minutes.
Slice.
Enjoy.

13. It's OK, Mrs R keeps me pretty much full. Some day, I'll bring you
some of HER enchiladas. I'm sure yours are good, but I'd bet you'd like hers.

And you wouldn't have to cook.

(PS: You're not alone among guys. I used to do that kind of extended cooking when I was single, too. Beats the hell out of going out to eat every night, doesn't it?)

Hope your other situation(s) are working out as well as they can. I do.

18. Holy cow! Did you do all that cooking
in the heat? I know, people in Az. have AC and those of us in Heat-Wimp Northwest Coast do not. Those enchiladas, especially look mighty tasty.
