I made up for it tonight with my famous cajun pasta--the sauce only simmers for 2 hours, but it still has that time-honed goodness.

Onions, potatoes and carrots in with the meat, but I'm guessing that'd still leave you out. ;-) Ms U has been a little stressed and depressed lately and my pot roast is comfort food.

I rarely eat red meat, but a nice pot roast is so comforting. I brown the roast, then slather it in horseradish sauce. I cook at a low temp for 2-3 hours in beef or mushroom broth with some red wine. In the broth I also roast some shallots, carrots and potatoes and sometimes mushrooms. Slice up the beef, serve the veggies on the side with a heaping spoonful of the broth gravy, and a nice hunk of bread to dip. I eat everything but the potatoes first, then mash them all up in the gravy. Yum!!

covered in a jar of horseradish sauce, red wine, beef broth and the veggies you mentioned.
mine cooks for at least 8 hours
oh, i add bay leaves and garlic
by the time dinner is ready, it takes a SPOON to get it out - its THAT tender!

Good bit of red wine and beef stock in it as well. Garlic, peas, a few wild mushrooms, more garlic. There's a lot of pot liquor, it's almost a stew.

Pound four boneless chicken breats. Cover with four slices of alpine light swiss chesse. Cover this with (mixed) a can of cream of chicken soup and a cup of sour cream. Spread this topping on top of the cheese. Drizzle with 1/2 cup of light margarine. Top with 1/2 cup bread crumbs. Bake at 350 degrees 45-minutes. Service with rice and broccoli. You can low cal, low fat the daylights out of the dish and it still tastes great.:)

;-) Just kidding. I have a lot of respect for vegetarians and I've had some pretty good soy burgers. We don't eat a lot of meat any more (relatively speaking - you wouldn't believe the diet on which Ms Uly was raised) but sometimes, especially when it's cold or it's that time of the month (iron - yeah I know, but try getting her to eat enough spinach), it's gotta be meat.
