Beat the heat! Post your steamy-weather recipes here!
cucumber tomato salad

1 c diced cucumber
1 c diced tomato
1/4 c diced onion
1/4 c fresh mint, chopped
1/4 tarragon vinegar (or your favorite salad vinegar)
1/2 t freshly ground pepper
1 t salt

Combine ingredients, chill 1 hour.

5. I made this last night and it worked great!
We've been trying to do only stovetop cooking so the oven doesn't get turned on in this triple digit heat.

I put 4 perch fillets in the skillet and lightly dribbled with Seeds of Change Greek Feta salad dressing. I let it sit for half an hour while I made some long cooking brown rice. I sliced the zucchini and yellow squash into thin coins and spread them over the top of the fish. In the microwave, I melted some Brummell and Brown with minced garlic and then added the juice of half a lemon. Drizzled this mixture over the zucchini and squash, salt and pepper to taste. Turned heat under skillet to medium-low, cover and cook for 15 minutes. Flavored the rice with a little Brummell and Brown, garlic and parsley. Put the fish and veggies over the rice on plate, drizzled with sauce from the skillet and served with lemon wedges and rolls toasted in the toaster oven.

It was really good and I wasn't standing over the hot stove through the whole process.

I do make your cuke and tomato salad very often with garlic and no mint. It's really great because you can keep it in the fridge a long time, adding fresh veggies to it as it depletes. That and a good loaf of bread make a great supper.

Prep Time: 15 min
Total Time: 1 hr 15 min
Makes: 8 servings, about 1/2 cup each

1 pkg. (4-serving size) JELL-O Pistachio Flavor Instant Pudding & Pie Filling

1 can (20 oz.) Crushed Pineapple, in juice, undrained

1 cup Miniature Marshmallows

1/2 cup chopped Pecans

1-1/2 cups (1/2 of 8-oz. tub) thawed COOL WHIP Whipped Topping

MIX dry pudding mix, pineapple, marshmallows and pecans in large bowl until well blended.

ADD whipped topping; stir gently until well blended. Cover.

REFRIGERATE 1 hour or until ready to serve.


If that is a little too exotic for your taste, just get a watermelon and dive in.

11. I tasted a drink recently with rum and mint
and something else...I'm not sure what it was. The drink was clear in appearance, not overly sweet, and very refreshing. It had a Spanish name. If anyone can tell me what it's called, I'd love to know.

3 fresh mint sprigs
2 tsp sugar
3 tbsp fresh lime juice
1 1/2 oz light rum
club soda

In a tall thin glass, crush part of the mint with a fork to coat the inside. Add the sugar and lime juice and stir thoroughly. Top with ice. Add rum and mix. Top off with chilled club soda (or seltzer). Add a lemon slice and the remaining mint, and serve.

been on a mojito kick for a couple of years now. Labor intensive suckers, but YUMMY. Mint is finally taking off and just remembered the club soda today. Got the limes a couple days ago (they are a regular on the grocery list, but soda isn't, dang it.

I would add to your recipe that you need to crush some of the lime peel too - you need just a touch of the natural bitterness...

63. If you are ever in Key West, there is a place in Old Town called
El Mason De Pepe. They make the best Mohitos anywhere. There is an El Mason de Pepe in the new town and they probably make good Mohitos too, but you really want to go into Old Town for the ambience.

1 pt. grape cherry tomatoes quartered
1 shallot finely chopped
1 sm ball fresh mozarella diced into small cubes
fresh basil (approx 10 leaves) chopped
fresh flat leaf parsley chopped (about 1 TBS
salt & fresh ground pepper to taste
2-3 TBS extra virgin olive oil

Mix all ingredients together & refrigerate for 1 hour. Can be used with bread as an appetizer or put on top of mixed greens for a salad. Add your favorite dressing.


"Uncooked" tomato sauce
Sauce:
2-3 cloves minced garlic
1 onion chopped
fresh basil chopped (about 2 tbs)
10 roma tomatoes cored, seeded & chopped
1-2 tsp capers rinsed & drained
salt & ground pepper to taste
fresh pargiana or romano cheese to taste
1 - 2 TBS Extra virgin olive oil

Add oil to bottom of saute pan and saute' garlic & onion till tender, remove from heat. add all
other ingredients (except cheese) and toss.

Cook pasta till al dente' and drain. Pour into pasta bowl, pour "sauce" over pasta and toss. Season with salt & pepper and top with grated/shaved cheese. This dish can be served hot or at room temp.

Go to Trader Joe's and you can get all of these ingredients:

stuffed grape leaves
hummus
baba ghanouj
feta cheese (buy a block and cube it)
kalamata olives
roasted red peppers
pita bread

Arrange these ingredients on a nice tray. You can warm the pita bread in the microwave. Sit down and open a bottle of wine and enjoy :-).

I also like salmon salad (I keep mine simple with a bit of onion, some Mrs. Dash seasoning, and just enough mayo to hold it together) on cucumber slices.

Grilled chicken Caesar salad is another easy to prepare dinner (especially if you're using pre-cooked, pre-sliced chicken).

But I put it in the oven at around 9 am while it was still not bad. I told my honey we will just reheat for dinner and that's what we did. But we've been eating lots of salads and sandwiches too.

26. Iced noodles!
Popular dish in Japan, where summer is ghastly hot and muggy.

I don't really have a recipe, but...

1) Cook a quantity of udon noodles according to the package instructions.

2) Drain in a colander and run cold water over noodles to cool them and stop cooking.

3) Dump two or three trays of ice cubes on top. Mix them in with the noodles. Let sit for 10 or 15 minutes until noodles are nicely chilled. Drain off water from melted ice.

4) Serve noodles with soy sauce, chopped green onions, and ground red pepper to taste.

Most refreshing!

It's pretty much like any noodle dish--add the condiments you like and... well, enjoy. I always put on some Tibetan-style hot sauce, truth be told. Hmm... wasabi would probably go well on them, too. The real trick is to get the noodles nice and ice-cold. :9

29. roasted chicken from the deli counter, cut up + bag-o-salad greens
+ feta + other veggies if you have the energy + your fave dressing = fast easy cold (add bread if you have the energy)

simmer carcass early next morning for broth - freeze or make quick soup for next meal.



Crock pot out on porch for cooking anything, then serve cold or use microwave to heat for sandwhiches, burros, etc.

Here's a recipe I found on the net:

Larb Gai - Spicy Thai Chicken Salad
Use fresh herbs in this recipe, dried will not even come close! Use of boneless, skinless chicken and no added oil makes this a very tasty low-fat dish.

Ingredients:
2 - 3 tbsp lime juice
2 - 3 tbsp chicken stock
2 tbsp fish sauce
1 tbsp sugar
1 tsp ground dried chilies (depends on how hot you want it - not to be substituted with "chili powder")
10 mint leaves, shredded
3 - 4 shallots (small purple or red onions), chopped
5 cilantro leaves, shredded
4 oz minced chicken breast
Fancy lettuce and mint leaves (for garnish)
Directions:

1. Line a serving dish with the lettuce leaves. Chop the chicken to make it similar consistency as ground beef (can be done in a food processor)

2. In a fairly high wok, add the chicken stock, stir fry the chicken until it just starts to turn whitish, then add all the remaining ingredients (if using precooked meat, simply add everything to a hot wok together), and stir until heated through and the chicken is cooked

3. Serve on the bed of lettuce leaves and garnish to taste.

54. Most of the customers were pretty cool.
Our customer base was mostly women and gay men. And up until when the store was sold to a chauvanist asshole, it was like the fucking "L Word" working there, which was awesome. Occaisionally however, someone would get all offended by us (such as in the following case)...

I'm standing in front of the deli counter, deciding on what to have for breakfast. I spot a sign (written by a Polish immigrant without the greatest command of the English language) for 'Daikon Salad' except it says, 'Dyke On Salad.'

I completely bust up laughing and say to the chef, "Hey Frank, you know, last time I checked there was no 'dyke' in 'daikon.'" He goes into hysterics with me. Customer takes her food and huffs away (she was generally a bitch anyway, if it wasn't this, she would have found something else to huff about). Frank is just like, "Man, you should have seen the customer's face when you said 'dyke.' It was priceless."

56. Down here in the Keys, Pirates Salad is the best party take-along:
Depending on the size of the salad, decide how much of these ingredients you will use:

Fresh whole shrimp, cooked, peeled and de veined and chilled.
Spiny lobster tails quartered (of course cooked and chilled).
Red, yellow, green sweet peppers chopped.
A bit of fresh celery chopped.
A bit of fresh Vidalia onions chopped.
Tossed with Marzetti's cole slaw dressing to taste.
Tossed with salt and white pepper to taste.
Tossed with at least a quarter of a cup of rum to taste.

The colors are beautiful for a party dish, but the rum is what makes it a "Pirate's Salad." This dish will impress any party for the color and decadent chunks of seafood.

Enjoy!!

P.S. We love to grill the shrimp and the Key's spiny lobster for dinner, and then use the leftovers for the Pirate's Salad the next day.

67. Spinach salad with TONS of other fresh veggies cut up in it, fresh fruit
(I'm partial to red grapes myself) and some cheese and crackers (muenster and wheat thins are my personal favorites)

Dorothy Lynch for the dressing on the salad.

I could live on this stuff all summer long.

73. Dorothy Lynch's Homestyle Dressing...it's a kind of sweet French with
poppy seeds...been my fave since the late 70s when I first had a friend recommend it.
The low-cal is NOT as good, IMHO...
I rarely use any other kind.

70. No-cook scotch cucumber treats - gobbled up when it's hot
People love ice-cold snacks on a miserably hot afternoon/evening. These DISAPPEAR when I bring them to a party in the middle of summer.

chilled cucumbers
1 pack of Philly cream cheese
scotch - a sample size bottle will be enough if you don't usually keep this around the house
Worcestershire sauce
Tabasco
horseradish
lox pieces (big delis/supermarkets that sell lox by weight usually sell containers of "scraps" relatively cheap)
Metal plate

I do this out of my head, to taste, so I don't know any of the proportions.

First, refrigerate the metal plate

Then, using a fork, score the cucumber, then cut it into slices about 1/4"-1/2" wide
Combine the cream cheese, scotch, Worcestershire, Tabasco and horseradish to taste - you just want to add a little zip, not make it actually hot. You should be able to taste the scotch, but it shouldn't be overwhelming.
Pipe or spread cream cheese mix onto the cucumbers. Decorate each one with an "X", using the lox pieces.
Put on the metal plate, and re-refrigerate until ready to serve.
