Chips and Pico de gallo salsa

Made some fresh pico de gallo last night for fajitas, eating them now with chips while drinking an ice cold martini.

In the salsa:

One huge fresh tomato from my garden, seeds removed and diced.
One sweet onion diced.
One cucumber seeds removed and then diced.
Three jalapenos seeds removed and diced.
One Anaheim pepper, roasted over an open flame, skin removed, and diced.
Juice of two limes.
Some fresh ground pepper.
And a small handful of cilantro chopped up.

Even better that you roasted it over an open flame. I would add some fresh garlic. Or maybe some roasted garlic instead.

Used it all for the marinade on the skirt steak for the fajitas. :)
