Do olives freeze well?
So I'm making a roasted-veggie pizza for first dinner (my kids eat like Hobbits) and I opened a giant can of black olives. There are more olives than I can fit on the pizza crust. So, can I freeze the rest in plastic bags and use them later? Or do I need to have a giant orgy of olive-eating and use 'em up before they mold?

1. I don't think they do..
... my wife is the queen of freeze and she's never done olives. (She's out shopping or I'd ask her :)). But, if you store them well they will last a very long time in the refrigerator. And that white crap that forms on the top of the liquid in green olives is just fat, it will not hurt you.

2. Found this little tidbit for you...

Pickled mission olives freeze satisfactorily. Other varieties soften badly when frozen and thawed. Use green-ripe or dark-ripe olives. Cover with a brine made with 4 ounces (about six and one-half tablespoons) of salt per one gallon of water. Boil 10 to 15 minutes. This will lessen the softening from freezing. Discard the brine and chill the olives in cold water. Pack the olives without brine in rigid plastic containers that are moisture-vapor-proof, and freeze. Before serving, allow the olives to thaw thoroughly in refrigerator. If desired, roll the thawed olives in olive or salad oil mixed with chopped garlic or other seasonings. Let stand in refrigerator overnight.

3. Those olives will last a LONG time in the fridge if you keep them
in the liquid in a sealed container.

5. Don't freeze 'em - they will technically freeze, in the sense of get
to a freezing temperature, and you won't ruin them in the sense of making them dangerous to eat, but you WILL entirely destroy them into something that you won't want to eat.

They will keep for a long time in the fridge if you kept the juice.

I suggest you use them in salads with some feta and artichoke hearts. MMmmmmmmm!
