I made guacamole, and made nachos with Colby and Jack cheeses...also served with salsa and sour cream. :9
I made a mess of rice, and then I sauteed garlic, onion, and gr. peppers in olive oil, to which I added a can of Goya black beans...
Oh yum! It was soooooo good! :bounce:

I made a homemade version of the sausage soup you can get at Bertucci's. I thought it was quite delicious, and my son ate quite a bit of it, so it's possible it really tasted ok.
1.5 tbs. olive oil 4 patties of sweet italian sausage 2 tbsp. chopped garlic 1 onion 5 small cans chicken broth 2 tsp. tried basil 1/2 small can of petite diced tomatoes (drained) 3 handfuls of frozen chopped leaf spinach 1 bag of Success boil-in-bag brown rice (prepared) salt and pepper to taste.
Sweat the onion and garlic in the olive oil in a big saucepan over medium heat. Then break up the sausage patties add to pan and cook until sausage is cooked through. Add remaining ingredients and heat until everything is warm.
I served mine w/ a sprinkle of parmesean cheese on top.
