You need: 2-3 tablespoons of machaca (shredded dried beef, unflavored beef jerky will do in a pinch) 4 corn tortillas 3 eggs olive oil some onions some tomatoes one serrano pepper (jalapeño will do, if there's no other choice). salt and black pepper some hot sauce (I prefer Valle de Mexico fire roasted salsa).
a cast iron skillet
If the machaca is in whole pieces, cut it into strips across the grain.
put the eggs in a bowl with the salt and pepper, and beat them.
Cut the tortillas into one inch squares and fry them in oil until light golden brown. take them out of the oil and set them aside.
Cut the serrano peppers into rounds (one quarter pepper per egg), the onions into inch squares, and cook them together in the same oil until the onions turn translucent.
Drop the tomato in, cook it a bit to boil off some of the liquid, drop the eggs in, stir them a bit, drop the tortillas in, turn the flame off, stir them together a couple of times then cover them. The heat from the iron skillet will be enough to finish the cooking process.
Put the contents of the skillet on a plate, add salsa to taste, and enjoy!

based on a Diana Kennedy recipe. Probably not the one you had in mind but it's very tasty.
Blend these ingredients together: 1 cup cooked tomatillos 3 freshly roasted and peeled poblanos or 4 canned Ortega roasted large mild chiles. 1/4 cup cilantro leaves A small onion, chopped Salt to taste
Have ready: 1 TBSP canola oil 1 cup chicken broth
More canola oil for frying 6 stale corn tortillas, cut into wedges 1/3 cup crumbled queso fresco or farmer's cheese 2 sliced hard boiled eggs Sliced radishes Chopped cilantro leaves
Heat oil to medium in a large frying pan and added the blended sauce from above. "Fry" the sauce for a few minutes, stirring constantly. Add broth and cook for a minute or so more to incorporate, then remove the sauce from the heat.
In a separate frying pan heat oil and fry tortilla pieces until they just start to crisp up (don't let them brown.) Drain on paper towels.
Reheat the sauce and add in the tortilla pieces. Stir until the tortilla just start to soften again, then remove from the heat and plate it. Garnish cheese, egg, radishes, and cilantro.
