Holy Mole' Casserole.
Black beans, corn, onion, peas, tomatoes in a homemade mole' sauce baked in a casserole topped with cornbread mix.
Whatcha have?

It was perfect. Super thin crust, good sauce, lots of cheese, tons of very thinly sliced fresh mushrooms (nothing is worse than places that put canned mushrooms on pizza).
Honestly, I think I wouldn't move to an area with crappy pizza.

Cooked them on the grill. then brushed BBQ sauce on them. And they were pretty darn good. I usually bake them first. Oh, well.

I never did have much luck with getting ribs to come out juicy unless they were the country style with lots of meat on them.

a little something at least. I don't know what has you upset but a totally empty stomach makes it feel worse. Besides, when facing hardship, it's best to keep up your strength. Go with something a little blander than your usual and light. I've found a nice bowl of hot rice with a little butter, sugar, and milk will lighten the spirits a little. :hug:

We haven't eaten yet.....it's early on the West Coast....
I have a crock pot full of something I call Ropa Vieja! (Spanish for Old Clothes........)
You take a medium sized flank steak, and put it in the bottom of the pot.
Cover with a sliced onion, a can of stewed tomatoes, and a can of tomato paste.....
Cook on high for the first hour or so.......
Then turn to low for the rest of the day....The smell will make you hungry long before it's ready!
I reheat some rice, and break up the flank steak into long fibers.......
Serve the meat over the rice........and enjoy! :9

I've had to tailor my cooking since hubby went veg so no meat in the house. It's a challenge coming up with some alternatives at times.

We live in the country and I'm thinking of putting a few sweet potato vines on the front fence. I love the look of the vines and would have the sweet potatoes to boot! Yum!
