I chopped up a big chunk of red (really purple) cabbage and a third of a big yellow bell pepper and part of an eggplant. The cabbage and the eggplant are locally grown. Then after I sautee 'em in olive oil a spell, I beat in two eggs and stir it all around until the eggs are lost in all that purple and yellow. Then I dollop in a dose of Valentina hot sauce. Mmmm, doggies, this is eatin'!
