I'm cooking my ass off this weekend! yay!
Steak tips tonight
All day long Beef Stew tommorrow
1/2 day long pasta sauce Monday

:9

and then, Tacos on Tuesday
Pork Chops on Wednesday
Chicken Stir Fry maybe on Thursday
and possibly Steak Tips again, or Steak, Onion, Pepper sandwiches on Friday :D

I looooooove to cook, it's true :)

2. I made some awesome navy bean soup.
I threw it in the crockpot before I went to bed Thursday night and in the morning it was done. It is the best bean soup I ever made! And, instead of cold soaking the beans, I did the boil 2 minutes, let stand for an hour pre-treatment. Guess what? No gas!

This is a big deal because I don't cook -- I've had two kitchen fires due to my ineptitude. I wish I had your talent, bicentennial baby! Usually I nuke everything.

8. Still working out the recipe...
It's my first one... :D

So far, here are the ingredients:

Stew Beef (Chuck) 2 lbs
1 Spanish Onion
Fresh garlic
Carrots
Baby boiling onions
Yukon potatoes
Small purple turnips
Bay leaf
A dash of basil & thyme
Black pepper
Sea Salt
Beef Stock
Red wine

I'm going to brown the beef and veggies first, deglaze, throw everything in the crock pot and cook for hours and hours...

Oh yeah, and marinate the beef int he wine tonight too :)

13. Sounds good! I get a lot of ideas from The Food Network,
though I tend to change a few things. My favorites are Rachael Ray (fast), Tyler Florence (he can make anything!), and I've gotten so I like Paula Deen, who makes comfort food and had Jimmy Carter on her show!:bounce:

The Ultimate Beef Stew - Tyler Florence - might give you some ideas, and has most of the same ingredients... :-)

You're more than welcome, my friend. As I said, I get a lot of ideas from The Food Network and I always learn a lot from Tyler Florence. There are more beef stew recipes, but he's the best and this seemed closest to yours. Let me know how it comes out, since I'd like to try it...:9

4. Whatever I make, tonight, it comes with salad and corn-on-the-cob...
Bagged salad and vegs don't keep and the corn is probably the last of the season...*sigh* I found some at my local grocery store, since my farm stand, with terrific corn and tomatoes, appears to be gone...;(

I could make several kinds of pizza or chicken ranch tacos or spaghetti, with either sausage or mushrooms or vodka cream sauce, but I have leftovers that I have to use up, my grandmother's favorite casserole (very easy, since she didn't cook) or meatloaf. I'm afraid that the fridge is working overtime, since it's too full. There is endless nearby highway construction, making my trip to the grocery store a nightmare, so I take advantage of every trip... x(

Sounds as if you have an ambitious week! Who eats all of this, anyway?!:D

12. Oh! You have company! Now this makes sense!
There are only the two of us, and I have two eight pound dogs, so I tend to make way too much and have leftovers... My mother used to ask me how many I was feeding, LOL, but it's her fault, since she's Polish and we need to feed people... :-)

You're fortunate to have a sous chef... I could use an extra pair of hands. I feed a guy who doesn't cook and the dogs are too short to reach the stove...:-(

22. Sniffa's a great cook as well
I just happen to have the drive to run the whole line myself most nights, so to speak. He rocks out on certain things, and helps me with mine. When I don't feel like cooking, he does most of it. :)

26. I mainly use sweet peppers...
Sniffa like the sweet and the hot... :)

Although, in my pasta sauce, I use both hot and sweet Italian sausages. :shrug:

Isn't it great? What a stress reliever...When I'm tense, I cook :)

27. I gotta great recipe from Martha where you use both hot and sweet
sausage and a ton of basil and stewed tomatoes.

My butcher thought I was dingy until I brought him some.

Whenever I used to be angry, I'd make soup. All that chopping and slicing helped me get over myself.

as well pan roasted breasts{chicken} with a vermouth reduction.

sausage and peppers with more sauteed onions than you can shake a stick at.

left overs of all that feed the rest of the week.

29. Do you make your own meatballs? I have yet to attempt that...
I've gotten them from my corner market that really does make homemade food. And I make my mother's spaghetti sauce which contains ground, beef, sausage and lots of vegs that takes three hours to cook, but I've never done meatballs from scratch...:shrug:

I have a recipe that I got from The Food Network for turkey meatballs that sounds really good. I'm certainly done buying ground beef for awhile... And spinach.:eyes:

33. ok here goes...
1/3 lb veal
chuck
pork
2 italian sweet sausages

1 medium onion

4 cloves of garlic

2 slices white bread soaked in 1/2 cup of milk

tspoon of cumin -- more if you like it -- i like more

salt and pepper to taste -- make an experimental meat bal at first ot taste seasoning.

1/2 cup chopped parseley

some rosemary if you like it.

you will love this recipe.

And then you cook them, saute them in some oil? Olive oil? And then do you heat them in the sauce? My Sicilian friend makes his own meatballs and that's how he does it...:-)

36. use 1/3 cup of olive oil.
don't forget to cook that experimental meatball to test for seasoning -- sometimes i leave that out -- and inevitably regret it.

and my friend explained that I had to cook them before I added them to the sauce, but I've never made my own. I usually get the ones from my corner market, pre-cooked, and they are very good, but your recipe sounds much better. I like to use herbs in cooking, as well. :-) I'll have to start growing my own, since it's not always possible to find them in stores, here in the North Country...*sigh*:shrug:

Thanks for the important suggestion. I'll remember. I often wonder how something's turned out, since you can't test for seasoning, with certain things, like raw meat, for example...;)

38. you want to get them nice and really browned on the outside.
then you can put them in the sauce -- to flavor the sauce -- and cook them on a low heat for a while.

say 20 or 30 mins.

the meatballs should be cooked at a med high -- but not high.

get the olive good and hot before putting them in.

but don't burn the olive oil.{i'm not talking about afte you put the meatballs in}

please let me know how this works.

39. Thank you. I wasn't sure, when I did this before, exactly how to cook them
I did get them really brown, worried about burning them. And olive oil doesn't have that high of a smoking point. I often use canola oil when sauteing, but it doesn't add flavor. So thanks for explaining exactly how to do this.:D

I'm making tacos this week, but got chicken, instead of ground beef, since warnings about ground beef are in the news now, as fresh spinach was last week.*sigh* I usually get the Angus, hoping to avoid any contamination, but there's no point in taking any chances. However, I'm definitely going to try this and promise to let you know.:-)

Do you use fresh or dried rosemary? I have the dried and don't know if I can find fresh. Around here, it's a crap shoot. Parsley is no problem, but I've actually had to hunt for Italian flat leaf in my "Super Center" grocery store, which has the best produce dept.:eyes:

but i don't see why you couldn't use either -- as a general rule dried herbs are more potent than fresh.

and i don't see why you couldn't have an all pork meatball -- i'd have to think about that and maybe try it.

but you have sausage to with the ground pork -- you just increase the amount of ground pork.



might be a bit much -- i mean a meatball is a meatball -- maybe i wouldn't screw with it.

i LOVE italian flat leaf -- but either kind will do.

I have trouble crushing the dry.x( I prefer fresh herbs, but, as I said, I really need to grow my own, since I have trouble finding fresh herbs in my neck of the woods. Parsley is easy and I can usually find basil, make my own pesto, but anything else is tough...:shrug:

And I've never been big on pork, but will use a mix, sometimes, like when making meatloaf. I'll just have to make sure that the beef crisis is over, and the spinach, and tonight on the news, I heard that lettuce is now suspect...:eyes:

I really would like to have a garden, but we have a short growing season. I've grown fresh basil inside...:-)

And I only use Italian flat leaf parsley. The curly kind is useful for garnish...;)

I'll be on the lookout for fresh rosemary. I used to make a chicken dish using rosemary, which I should try to find...:-)

Thanks so much for all your advice. I enjoy cooking and have watched The Food Network for ages, but I hesitate when making things for the first time, want to get it right...:-)

45. We had a Rick Baylis weekend
I recently bought his new cookbook "Everyday Mexican", which some friends recommended. In it, Rick simplifies those three-day long mole recipes into doable versions that are still very tasty. I made a slow roasted spicy pork tinga, rice and chorizo-black beans, chicken yellow mole and roasted plantains with pecan-de leche sauce. Yummy!!
