I've been sick and sleeping!
It's the flu-like disease that never fully disappears. Has anybody else had it? Fever, headache, sore throat, exhaustion, cough, sore muscles? It lasts a couple days, disappears, then reappears a week later. Bah. I feel like a trapped animal in this house... reclining on my chaise and watching Buffy :P Suffering keenly.

4. I'm already feeling better.
I'm just wondering when this thing will leave the house for good. My oldest son is on round two; this is round four for me. Also, the cross doesn't scare me; hold up Condoleeza Rice and you might be able to ward me off.

my daughter had it; finally went away after a couple of weeks. Do you have orbital myalgias - eyes hurt when you move them around? She did. Here's to hoping you're feeling better and up and around soon! :hug:

6. I don't have the eye problem this time around
but the first two episodes had that, and red eyes. Pretty. Thanks for the soup!! Alas, I am still expected to prepare all the meals though at death's door. It's spaghetti w/meatballs tonight. Maybe I'll make the soup tomorrow. It looks GOOD.

9. Bah! Someone should be cooking for you!
Here's the recipe for the soup (same one in the pic), just in case you do want to make it sometime. :hi:

Good Health in a Soup Bowl

1/2 cup white beans picked over, rinsed, and soaked overnight in cold water
2 tablespoons olive oil
2 cloves garlic, sliced
2 onions, minced
2 carrots, thinly sliced
1 bulb fennel, minced
4 stalks celery, sliced
3 cups shredded kale
3 cups shredded green cabbage
3 cups shredded collard greens
2 cups fresh green beans, sliced
2 potatoes, scrubbed and cubed
3 quarts favorite chicken broth or stock
1/2 cup each: chopped parsley and basil
Salt and freshly ground pepper to taste

Optional enhancements:

Pesto to swirl into soup during last 10 minutes of cooking and a sprinkling of grated Parmigiana cheese

1. Drain beans and cook with plenty of cold water over high flame to boil. Lower heat, partially cover pot and simmer for 45 minutes until beans are cooked tender then drain.

2. Heat the oil in a large stockpot and gently cook garlic, onions, carrots and fennel until softened, about 5 minutes.

3. Add beans and remaining ingredients, up to herbs and seasoning. Bring to a boil, lower to simmer and cook one hour.

4. Add herbs and seasoning, simmer for another 20 to 30 minutes. Serve steaming hot with enhancements, if desired.

This soup is even better the next day. Keep stored in covered container in fridge.

Approximate Nutritional Profile per one cup serving: 100 cal., 15 g carb., 3 g protein, 1 g fat, 3 g fiber.

3. Geez, I've been feeling pretty good today after feeling like that for
a few days. I hope it doesn't show up again, but it might... hubby has had it off and on for about ten days. :(

However I've lost four pounds by sleeping and eating ice cream. That's not so bad!
