I'm thinking Mexican food for dinner tonight
There's a Mexican restaurant around the corner from my house that offers take-out and their Chicken Enchiladas are to die for so is this rice and beans side dish they make. Since there is nothing good on TV tonight and I no longer care about watching the World Series, I may as well have an enjoyable dinner and watch a good DVD or two tonight. What's on tap for you guys this Sunday evening?

1. Just Hangin'
Wife made an oven roast to die for, chocolate layer cake from Wegman's for dessert-top notch. Watched like the first three innings, last I saw, Detroit was winning 2-0 and they made pitcher Kenny Rogers clean some brown substance off of his left hand.

2. Today was a busy day
I'm just resting tonight. Supper's in the oven (I needed something quick, just some Cajun and Montreal steak-spiced chicken thighs), and I've just fixed a salad.

I'll probably watch a horse race I taped earlier today, and then do some reading, while checking in on DU once in a while.

The Mexican food sounds delish. :9 :hi:

I just finished it like a half an hour ago, I ate too much and am now WAY full!

We got stuffed too. Tonight was just pot pies. Quiet evening at home. :)

when I was little, my stepmother used to tell me that if I ate any more Mexican food, I would be Mexican. To which my reply was, "Great! Then I could eat it at every meal!"

Specifically, I am thinking

enchiladas verdes con queso
frijoles refritos
freshly-made, greasy tortilla chips
cilantro
salsa
