Everyone seems to like this simple finger food.
Ingredients:
Medium size flour tortillas Cream cheese Canned, diced green chilies (mild) Scallions Roma tomatoes Limes
Prep:
Use two cans green chili's, drained, 2 scallions, one tomato and 1/2 lime for each package of cream cheese. Filling covers three medium sized tortillas, makes about 20 hors d'oeuvre when sliced.
With all ingredients at room temp, drain chili's, dice scallions and tomato, blend well with cream cheese and add juice from 1/2 a lime while blending.
Spread 1/3 of cream cheese filling evenly on each tortilla. Roll tortilla firmly, wipe off excess filling, wrap in saran wrap and chill overnight.
Plating:
Unwrap tortilla rolls, trim ends square, and cut into 1/2 - 3/4 inch slices.
Lay out on a chilled plate, side with lime and tomato slices.
Garnish with lime zest and scallion ribbons (narrow, sliced strips of the green part of a scallion).
Return to refrigerator until serving.
There's any number of combinations on this theme. Olives are a staple, I just don't care for them except as a side, they tend to overwhelm everything. A little cilantro would be a good garnish and addition to the filling, though. And, of course, the diced chilies could be jalapenos... :thumbsup:
