Me, I like an assortment of tastes: maybe some cheese, some olives, some hummus, some crackers, some bell peppers, some tomatoes. It is very quick and it depends on what I can find in my fridge...but it is not exactly thrilling. What do you have for lunch? I am seeking new inspiration as I am working from home on Tuesdays and have a bit more time to create something tasty.

At school I usually buy lunch in the cafeteria or take a microwaveable soup and half a sandwich. Usually fruit, too.

:) It saves me about 10 minutes instead of trying to figure out what I would want. Generally PB&J, a fruit punch drink, some Goldfish, and fruit cup.

Though my mom only packed lunch for me until the end of elementary and then I was on my own. My own PB&honey sandwiches were never as good! If only that were any option.

Is that only if they are leftover? Elsewise doesn't it take a while to cook them? I LOVE beans and rice but hardly ever eat them -- no excuse for such poor behavior on my part! Leftovers are key for delicious lunches, I agree.

i agree.
peanut butter sandwiches appear to be the norm around these DU parts...I love peanut butter but not in sandwiches, probably because I can't get decent whole wheat or granola bread where I live.

of packed lunches, I always had peanut butter with honey...plain peanut butter made me choke but I was always stridently opposed to jelly. And I agree about lunchmeat (apart from my vegetarian way): slimy blechiness, I say.

Salad, sandwich, leftovers, cereal - something like that.
Today I had a Clif bar. Joy. I had an extremely busy day, and I wound up having a Clif bar for breakfast and another for lunch.

ETA: Yes, it was busy - I was at work all morning, then ran errands with my son until it was time to pick up my daughter at school, and we didn't get home until after 4:00.

Nothing like hot soup to make you satisfied.
Progresso canned soups are ok with my nutritionist.
Mostly, my husband makes me homemade soups on the weekend and I freeze them into single portions and microwave them for lunch.

I like thick soups, like spinach or pumpkin or lentil soups. I should try out the making of a big batch and freezing it...will let you know if I succeed! off to the baking and cooking group to see if there are any yummy recipes!

He usually makes me a lovely, lemony chicken with wild rice soup.
Sometimes it's a beef barley soup. But a lentil soup would be fabulous!
The cooking folks here at DU are fabulous. So kind and helpful.

I have a large breakfast, and then supper.
If I have a snack in between, it's usually something like nuts, fruit or some cheese on crackers. :hi:
