Need a suggestion for Xmas dinner. NOT Turkey
We did that for thanksgiving. Once a year is plenty for gobbler. I'm thinking maybe duck which we love but I never got the hang of cooking it properly...

17. Try it with very coarse rock salt -- it is sooooo yummy!
Maybe some root veggies -- Parsnip, potato, roasted in the pan

21. I think there is, out of thousands of vegetables, only one I find disgusting...
parsnips. My mom cooked them maybe twice and I swear I can sit here and imagine that awful taste after 40 years and it almost makes me retch. Actually I just did vomit on the floor. That's terrible, isn't it?

22. I really don't like parsnips either
unless they are pan roasted with a good cut of beef. They have to caramelize with the juices and seasonings to be edible.

25. Well, they are just one of many things I've decided have no place in my life
so I ignore them. Oddly, I do like their cousins carrots but not cooked. I've recently developed a taste for turnips but they have to be well done with a lot of salt. As they say, there's no accounting for taste, I suppose. :D

18. I won't! I make killer devilled eggs
I put in a few finely chopped capers and anchovies and a few drops of good balsamic vinegar!

And if I have them, a bit of thinly sliced kalamata olives on top! Not bacon though. :D

7. Prime Rib. Duck. Ham. Tenderloin of pork, beef, or venison.
Rack of lamb.

Many options, indeed!

Stay the fuck away from turkey - that butterball industrial shit is nasty. I wouldn't even serve that shit on Thanksgiving. Wild or one of the upscale turkeys is all I'll take.

Duck is very easy - just rub the cut part of half an orange all over it, shove the orange halves and two apple halves in the cavity, sprinkle on some salt and pepper, pop it pan breast side up on a layer of mirepoix in a roasting pan and cook it for 1.25-1.50 hours at 350 and then another 20 minutes at 400.

Tender, succulent, wonderful perfect duck every time. And then the carcass and the leftover meat will make a brilliant stock for noodles.

9. I would LOVE to find a good rack of lamb. It is impossible to find here, and
I have no idea why. Plenty of places on the web to buy but it's insanely expensive and no guarantee on quality. But I now live in purgatory food-wise, can't get decent or fresh seafood (I got used to buying mussels for a buck a pound when I lived on the east coast, now they're 6 or 7 a pound on the rare occasion I can find 'em)...:grr:

Maybe I'll try the duck again, thanks for the tip, it sounds easy. :D

10. Nothing wrong with that! You would be appalled to see how the Okies around here
fry catfish - filleted to 1/4 inch thick and fried until it looks like (and tastes worse than) potato chips. ARRRGGGHH

19. That is the right way! I can't convince the local yokels, though!
They say it has to be crispy so it doesn't taste like fish...how damn stupid is THAT? Why the hell cook fish if you don't want to -taste- it? But these people are Republicans, so...

30. BBQ Ribs & Smoked Brisket
Edited on Mon Dec-11-06 12:33 AM by Nicole
We're having the reverse of Christmas in July, we're having a Christmas cookout.

Ribs
Brisket
Deviled eggs
Cucumber & onions
Potato salad
Coleslaw
Roasted corn on the cob
Baked beans
Grilled yellow squash & zucchini
Blackberry cobbler
Peach cobbler
Homemade ice cream

We have ham or turkey dinners at various homes over the holiday week so our cook out is a welcome change from that.

salmon steaks or orange roughy or stuffed tilapia I've made over the past holiday seasons. It's fast, easy, forgiving to new cooks, versatile for experienced cooks, and easy on the waistline. :9
