1. Authenticity is over-rated.
In the history of humanity, food has by and large sucked. Give me the innovations made possible by technology and plentiful supplies of food that was once only available to kings.

just this week, i made a curry with stuff that i do not think any asian culture has every put in a curry. i insist it was a curry, nonetheless, since it was bright yellow.

my mom (a notoriously BAD cook) does make a mouthwatering chimichanga..and she starts with a can of Campbells vegetable beef soup.

5. Two years ago, for Christmas dinner
I made something called "Indian pudding" from an "authentic" recipe. It sucked.

"Authentic" hasn't meant as much to me since then.
