Wow, I just made some chicken soup that is super delish.
Really hit the spot.

Everyone in the house is sick, so I figured a nice homemade chicken soup would be good. A baguette and a hot bowl of chicken noodle soup makes everyone feel better, doesn't it? :)

3. Sure.
Whole chicken, 3 onions cut in half, 5 cloves garlic, 4 ribs celery, 6 carrots, dozen whole peppercorns, 4 sprigs of fresh thyme from my garden. Cover with water bring to boil and simmer for a 1 1/2 hours - 2 hours.

Then I remove the chicken, set aside, remove the veggies, then strain the soup. Skim the top a bit.

I then pick the chicken off and make it into small chunks of varying sizes, set aside.

Cut up some more celery, carrots and set aside.

Boil some noodles almost all the way. I usually use broad egg noodles and don't cook them all the way.

Then I bring the stock up to a boil, season with salt until I like the way it tastes. Add the carrots, celery and simmer until they are tender. Add the chicken.

Put some noodles in the bottom of each bowl and ladle hot soup over.

Simple and yummy.

I like to add some hot sauce and pepper.

I think that's what I did. :)
