this 'evoo' thing seems to be kind of trashy. All it makes me think about is it sounds like something an evil cow would say... "evooo" instead of "moo". Extra virgin olive oil used to have sort of a classy ambiance, now that she's 'evoo'ed' it sounds like something you'd find in the kitchen of someone who decorates in slate blue and mauve with carved wooden ducks that say "peg and bob" on them. :puke:

20. Just because it's expensive |
|
doesn't mean it's classy.
It's all oil.
I see nothing wrong with her calling it EVOO. Extra Virgin Olive Oil is a mouthful to say...on the first reference she says it in full, followed by EVOO so people know what she is talking about.
I think it's mainly for time purposes that she does that.

I never paid attention. I was a baker through most of it. She has to prefer extra virgin for a reason. When I was on the kitchen side in one of the restaurants I worked in, we used only extra virgin olive oil and canola. I can't remember what the deal is...all I know is that if you are ever thinking of making a red velvet cake and realize that you are out of regular vegetable oil, olive oil is NOT a good substitute, and you WILL be able to taste it over the food dye, vinegar and cream cheese frosting.

For me, it's the dumbing down of culinary arts...Yes, she admits (thank jeebus) that she's not a chef, just a cook, but I see no need for ridiculous acronyms for a classic and beautiful ingredient such as Extra Virgin Olive Oil...
That being said, I've said before, she's not as bad as Sandra Lee, but she is now just a brand and another attempt at mass-marketing real cooking to the unwashed masses... Yes, I understand the need/desire for "30 minute meals", but she just makes it feel so commercialized...Her cooking has no 'soul', as it were...

it would take me 30 days to find all the ingredients in this "30 minute meal"
tablespoons extra-virgin olive oil (EVOO) 1 1/2 cups basmati rice 1 quart chicken or vegetable broth 1 fresh or dried bay leaf Grated zest of 1 lemon 2 teaspoons ground coriander 2 teaspoons ground cumin 1 teaspoon ground turmeric 1/2 teaspoon ground cardamom (optional) 1 tablespoon butter 1 small head cauliflower, chopped 1 eggplant, peeled and chopped (I leave on half the skin-I like the color and texture it gives the dish) 1 red bell pepper, seeded and chopped 1 onion, thinly sliced 3 cloves garlic, chopped One 14.5-ounce can fire-roasted diced tomatoes, drained One 15-ounce can chickpeas, drained 3 tablespoons mild or hot curry paste 3 tablespoons mango chutney Salt and freshly ground pepper 3 scallions, chopped, for garnish Cilantro or parsley, chopped (a generous handful) Slivered almonds or chopped cashews, toasted, for garnish

And her and Mario kicked ass.
I liked how calm and relaxed Rachael was during that show. She wasn't her usual hyper self either. Very toned down.
Giada seemed more nervous and frazzled than Rachael did.
Rachael proved at least for an hour anyway that she can battle with the other hosts on that network.

Does she mean she didn't go to culinary school, or that she just doesn't like the label? I think the whole chef thing is WAY, WAY out of control, anyway. The way culinary students act sometimes is ridiculous, and the way famous chefs act...they really are all just COOKS when it comes down to it. Kudos to her for not being pretentious.

She felt kinda bad when I cracked up upon opening it (she gave me that, plus a Paula Deen and a Barefoot Contessa cookbook), but I assured her that some people, like you, have sung the praises of her actual recipes, and that I would cherish it.
And, I will say, I've perused it a few times, and some of the recipes look good, and I'll try them out. My issue is really her and her personality, and the commercialization/branding of cooking, not her food. So, I'll report back, once I try one of the recipes, ok? :)

My sister has made several recipes from her books and they turned out quite well. Very affordable and time efficient.
of course, like all celebrity books, it really depends on the person making the recipes and not so much on who writes the cookbooks.
My mom has a Barefoot Contessa book and she loves it.

75. I think that some people just inherently hate too much "perky". |
|
She seems nice enough, and I bet that she can cook better than anyone else on this thread.

77. No doubt there are some great cooks here. |

It's really hard to compare the level of culinary skill, however. People just hate her because she's cutsie and perky. Hey, I don't care for too much perkiness either, but that's no reason to bag on somebody constantly.

I don't hate Rachael at all, but even I rolled my eyes at the olive oil.

79. I'll tell you what's always bugged me about the EVOO thing - |
|
Edited on Thu Dec-28-06 09:09 PM by bullwinkle428
extra virgin completely sucks when it comes to sauteeing something! I use the extra light variety for any kind of frying. It all has to do with the viscosity of the oil..."EVOO" just beads up on a hot surface, and will not distribute evenly across the bottom of the pan. Extra virgin has the strongest flavor, but should really only be used for things like salad dressing just by the way it behaves. I know there's some controversy as far as how much the oil is processed when it's not extra virgin, but if it's a pain in the ass to cook with, why fricking bother...
Edit: maybe I should have addressed this to bigwillq - he said that "olive oil is olive oil"! :)

89. Love Extra Virgin Olive Oil |

Not EVOO from Rachel Ray, would rather buy something that I know is good like DaVinci, Iliada or Barbera DOP.
