you use the egg white, however, i use water and it works just as good.
Edit: Just thought I'd add, my friend Yvonne, who's from hon Kong, says that egg rolls as we know them are more American Chinese food more than authentic stuff. But still, they are awful tasty. When we made ours, rather than use cabbage, we got taro, an type of strong Asian potato from an Asian market. those were some of the best egg rolls I ever tasted, i think.
