Poll question: Favorite omelet stuffers
Feel free to post the specifics.

(I made an omelet for breakfast this a.m.: ham, portobello mushroom, and shredded cheddar--it kicked butt.)

I like frittatas myself - I like the crust that forms in the oven.

I like wild mushroom and green onion topped with Parmesan. Any kind of pork product works well in an omelet/frittata too. :9

Edit - spelled frittata incorrectly. :dunce:

but musroom and cheese....yummmm

diced pepers, cheese, onions, ham, and SALSA yes!

crabmeat, swiss cheese, diced peppers, tomatoes.. super!

then there are days to just say to heck with the omelette: give me my huevos rancheros! (sort of hard to do, now that I'm low carbing it, but I can dream!)

17. Most family-style/breakfast restaurants here are owned by Greeks.
The Feta Cheese and Spinach omelet is a standard 'round these here parts. Nearly every family owned restaurant serves them.

San Antonio has some good Greek food, but not here. There are some decent middle eastern places that serve SOME greek food, but not exclusively. Sigh...

20. When I lived in Clear Lake, I knew of a place that would make them for me.
In Kemah. It was a Greek style place that was open for breakfast on the weekends. They didn't have Feta/Spinach omelets on the menu but...

One morning I asked the restaurant if they would try to make me one since they had the ingredients already. As luck would have it, the waitress was from Chicago, so she knew what I was talking about.

Bingo! Just like home.

It's sinful and disgusting, but nothing takes care of a hangover like a fat chili cheese omelet from Camellia Grill in New Orleans.

Whatever there's a little of in the fridge that's not dead. Chopped up too many onions -- save 'em, into the next omelet they go. That kind of thing. Taco meat, the last bit of guacamole, mushrooms, ham, cheese of whatever variety, salad "confetti," london broil, spinach....

GOD I'm hungry....
