The truth about Monterey Jack

Monterey Jack is a type of semi-hard cheese using cows milk. It is commonly sold by itself, or mixed with Colby cheese to make a marbled cheese known as Colby-Jack (or Co-Jack).

In its earliest form, Monterey Jack was made by the Franciscan monks of Monterey, California, during the 1800s. A shrewd Californian business man by the name of David Jacks began to first mass market the cheese. He produced a mild, white cheese, which came to be known at first as "Jack's Cheese", and eventually "Monterey Jack".

An aged version of this cheese, known as Dry Jack, can be grated and used much like Parmesan cheese. Dry Jack was originally developed during WWII by Peter Vella as the Italian styled cheeses became increasing difficult to obtain due to the embargo imposed on Italy during the war.

Another version called Pepper jack mixes hot peppers with Monterey Jack for a zesty flavor. Pepper jack is often used as an alternative cheese in dishes such as quesadillas, but can be eaten with bread or crackers as a snack.

I just had a sandwich with nine grain bread, deli turkey, a slice of monterey jack cheese, and liberal sprinklings of tabasco.

Jacks Peak, a few miles SE of Monterey, is also named for David Jacks.

But then, so did John Steinbeck — and they built a fucking shrine to him. :shrug:

But that's because Salinas got sick and tired of being thought of as "That place near Monterey where all the Mexicans live."

I was worried about being a renegade, but now that I have permission to eat pepper jack with bread or crackers as a snack, I can stop looking over my shoulder.

20. I ended up having a bit more Pepper Jack, this time on half a turkey sandwich.
With some tabasco splatted on the cheese.

That's a bit much cheese for one day, as Courtney Love might point out, but I was acting like I was on vacation all day anyway, so it doesn't really go on my permanent record.
