How about you? :hi:

11. I am making two soups |
|
But they are not for tonight's dinner.
I am making split pea with ham soup and navy bean with ham soup (we had a HUGH!!!11 ham this week and there was enough for two soups - which will go in the freezer for those days when life is too busy to actually cook).

marinating all day in jerk seasoning and about to hit the grill. Potato salad, corn on the cob and spinach salad. Hey, it feels like summer in Boston, might just as well cook like it.

31. southwestern shrimp soft tacos: |
|
shrimp marinated in lime juice, paprika, cilantro, garlic and red onion; garnished with a corn and tomato relish served in warm flour tortillas. New recipe, was exceptionally yummy.
tomorrow (Sunday) is low-key tuna fish sandwiches, but it's tuna mixed with capers, onions, celery, dill, cottage cheese, lemon and Dijon mustard. With some sort of spinach salad on the side.
Then Monday there'll be a green Thai curry, probably with shrimp, tomatoes and eggplant (store was having a buy one get one free bag o'shrimp).

43. Tilapia crusted with parmesan, garlic, and basil. |
|
Served with baby peas and whole wheat pasta in an Asiago Cream Garlic sauce. I have a nice white chilled to go with it that I picked up at a winery over along the Ohio River the first part of April.
Last night it was hot dogs and S'mores cooked on forks over an open bonfire in our backyard with all the neighborhood kids. Then we played "light tag" until we all had to sit down...
Yep, we ARE sophisticates, let me tell ya...

1 large onion chopped 2 stalks celery cut into quarter inch slices 2 cloves garlic very finely minced 1 bay leaf crushed 1 1/2 tbl or so of peanut oil 2 pounds black or red beans soaked overnight or parboiled 3 cups water 2 tbl chopped fresh parsley 2 cups quick cooking barley 2 cups frozen or fresh corn salt and pepper
In a 3 quart pan, saute onion, celery, garlic and bay leaf in the oil until onions are just beyond translucent, add drained beans and water. Stir and cook over low heat until beans are tender, about 1 1/2 to 2 hours. Add water if needed to keep from sticking, stir occasionally. Add parsley and corn, cook for another 1/2 hour. Meanwhile cook the barley. Keep stirring once in awhile and check water. Season with salt and pepper, serve over barley. Makes about 6 hearty servings. Hope you like.
