Costco has some kick-ass cheeses now!
We've tried two of their gourmet cheeses (at our Costco there's eight of them, in a separate cooler from the regular cheeses)

The first is a "Canadian Heritage Cheddar" (weird name, since it's actually made in Wisconsin) that's aged 8 years, and is hands-down the best Cheddar I've ever had. Nutty, salty, and addictive.

The second is Delice de Bourgogne, a triple-cream Brie-like cheese for people (like me) who don't like Brie. Or for someone like Mrs Kay, who does like Brie. It's a soft creamy cheese that is just amazing, with a slight bleu-cheese taste. We took this to a party and everyone raved over it. Even people who didn't like bleu cheese loved it.

Highly recommended. :thumbsup:

ps In the regular cheese section, the Dubliner Cheddar is excellent too.

2. I was just going to mention the Dubliner. It's my favorite "regular" cheese.
A chunk with some pretzel thins and an apple makes an excellent snack.

5. The Delice is a little pricey compared to the others

$9.99/lb IIRC. Also it's not truly a Brie, since it's not as "wet" (for lack of a better term). It's about the consistency of cream cheese and is white. It's not pale-yellow and rubbery-looking like Brie (can you tell I'm not a huge fan of Brie? :P)

The "Canadian" is I think $7.99 or 8.99. Dubliner is $5.99/lb. However, the Dubliner comes only in a 2-lb version (although you can get smaller quantities at Trader Joe's). The two gourmet versions come in various sizes, usually a bit less than a pound.

But please, splurge a bit and try the Delice. *swoon*

This decadent triple-cream cheese was the creation of the celebrated 18th Century gastronome, Brillat Savarin. He married full-fat cow’s milk to fresh cream, creating incredibly rich, full-flavored cheese with a smooth, melt-in-the-mouth texture.

How I wish we had a Costco nearby. The nearest one is about 40 miles away. Next to an Ikea, come to think of it.
