Sugar free sour mix? A fun experiment in mixology.
So I'm looking through the internets at the different recipes for sour mix, and I was hoping to find something telling me how to make sour mix out of Lemons and Sugar. I don't have but a few little packets of sugar handy at home, I have a big-ass 48 oz bottle (claiming to be the juice of 31 lemons) of lemon juice (2 in fact) and a 12 oz bottle of this really wicked looking saccharin product called fasweet (576 servings!). I figured that I look at the amount of lemon juice or lemons and sugar, take the amount of sugar and run it through the chart on the back of fasweet where 1/8 tsp of fasweet = 1 tsp of sugar and I'll be fine. But surfing the internet I keep running into references to simple syrup. First of all there is the problem of how much sugar is in the simple syrup, different sources seem to be saying 1-1 or 3-2 in favor of sugar. Then there is the issue of water. I'm supposed to add water to my lemon and sugar mix? I never used to do this when I first started making sour mix while in a country where it is not easily to be had. If course after a few of my lemon juice+ whiskey+ sugar drinks, a certain burning in the stomach wasn't uncommon. Before I pull out the calculator and start mixing, I just thought I'd ask if anyone has any advice concerning this.

3. I'd go 1:1 based on volume for water:sugar, and don't use that fasweet shit/crap.

But you really don't need to make simple syrup if you're just putting into whiskey, but it will help the sugar dissolve way, way easier.

Since you only have a little sugar, you might not have enough to be able to make simple syrup without it burning in the pan, unless you have a very small (1 cup size) sauce pan to make it in.

So just go with mixing the lemon juice into the sugar and making a nice paste that can then go into the whiskey.

5. What the hell, give it a shot.
If you're feeling really brave, add an egg white for a nice, foamy head. What's the worst that can happen? Besides a shitty whiskey sour and salmonella poisoning, that is.
