Help! What can I do with about 3 cups of fresh wonderful
homegrown apricot pieces? Birds hit every single one of my first "crop" (less than a couple dozen) of apricots. I picked them and cut of the bad spots and sprickled a little sugar on them, but I don't even have enough for a pie.

I don't have enough ice cream to make milk shakes or that was going to be my first choice. I do have a frozen pound cake but I am a long way from a store. I want to eat my yummy fruit harvest but how? Should I just freeze them until I can get some ice cream? :cry:

oh and I need 4 to 5 servings of whatever it is.

2. Cook them with water and sugar--low and slow.
Serve that syrup over pancakes (preferably buckwheat!) or french toast in the morning.

4. Make a cobbler!

I love peach cobbler, which is delicious with or without ice cream. It's uberdelish with Blue Bell's French Vanilla ice cream, though. :-)

Here's a recipe I found for Apricot Cobbler:

Apricot Cobbler
3 cups fresh apricots (or 2 (14 oz) cans apricots, undrained)
1/3 cup sugar
1/2 cup milk
1/2 cup flour
1/4 cup butter, unsalted
1 1/2 teaspoons baking soda
1 teaspoon icing sugar (powdered sugar)

Preheat oven to 375°. Melt the butter in a saucepan and then pour it into a baking dish. Mix together the sugar, flour and baking soda in a large bowl. Once mixture is smooth, pour in the milk slowly while mixing. Cut the apricots in half. Place the apricots into the mixture. Then pour everything into the baking dish. Bake for 45 minutes or until golden brown. Remove from oven and sprinkle the icing sugar on top.


It's very similar to the recipe my grandmother used to make, for peach cobbler. If you try this, let us know how it goes. :9

8. think I can get 4 or 5 servings?
When I was a kid we had on old apricot tree here on the ranch (it finally expired about 5 years ago) and June was apricot month - that tree would make buckets of fruit - enough for the birds the squirrels, and us to eat fresh until we had stomach aches, pies, syrup, canned dozens of jars, jam etc. I can't wait for this tree to really take off. This is the second year I have had it - it made three fruits last year and a couple dozen this so I'm hoping next will be "real".

10. Sure! Cobbler was my first thought as well.
It's the perfect way to stretch a limited supply of fruit.

Absolutely! You can easily get five servings out of that recipe...I'd guess at least six.

12. Apricot liqueur

....cover the apricots with sugar, let dissolve and add vodka.

Stir gently every day, keep in the dark and enjoy in about 2-4 weeks.

13. freeze em till you get to a store for some liquid petcin
then cook em up with a ton of sugar

home made apricot preserves :bounce:

one of my customers gave me some tonight along with a couple gallons of 'cots from her tree, I'm gonna clean em and use my food mill to make puree and freeze it for cobblers and preserves

15. Can you get a copy of Sunset magazine for June 2007?
b/c there are four apricot-based recipes in it that sound good (two desserts, two meat dishes if you eat meat):

Fresh apricot crisp (need 5 cups apricots for 8 servings, so you could halve the recipe...)

OR

Chilled poached halibut with fresh apricot salsa (1 lb apricots) - 4 servings

OR

Apricot-chocolate-almond biscotti (need 3/4 c. dried apricots)

OR

Grilled apricot-stuffed leg of lamb (needs 1.25 - 1.75 c. dried apricot halves).


I haven't tried any of these as I just got the magazine yesterday. If you can't access Sunset easily, let me know which recipe(s) you'd like and I'll try to get the to you tomorrow via PM.

16. Make a rustic tart
Just lay them in the middle of some pie dough and fold up the edges. It will look like a pizza but taste like a pie. I'd add a splash of amaretto to the fruit and brush the crust with an egg yolk before baking for some shine. Serve with vanilla ice cream .... Yum!
