8. I can get the Beignet mix at Kroger here in GA. Try a larger or a specialty grocery.

The secret is not to overknead the dough. Use fresh, hot oil and a slotted sppon, have a plate with a layer of paper towel on it to drain them and plenty of confectiuoners sugar to sprinkle on top. I fry mine in an electric fry pan. Make strong chicory coffee and mix with hot milk (cafe su lait) and voila! It'll be like you're in NOLA!

I can go down the street on weekends and get fresh (in Milwaukee!!) It's a 'neighborhood' restaurant, nothing fancy. The place opened shortly after Katrina--I suspect we've welcomed some refugees.
