Here's my take:
TOP CHEF Pros: * Creativity reigns supreme * Judging largely based on taste, texture, presentation * Variety of challenges encourages quick thinking and adaptation
TOP CHEF Cons: * Top prize isn't as attractive as Hell's Kitchen jackpot * Relatively few team-building exercises
HELL'S KITCHEN Pros: * Fundamentals first, creativity second * Elimination rounds judged largely on teamwork as well as food quality * Top prize includes guaranteed employment
HELL'S KITCHEN Cons: * Insanely high-stress work environment * Team leader saddled with nominating elimination candidates * Did I mention the abusive, foul-mouthed head chef?

Top Chef is the Project Runway of food, so it is a bit more nerve wracking for me to watch.
Hell's Kitchen shows the workings of an entire restaurant, not just one dish for one chef.
Each has it's own take on the chef reality thing, which is great because neither one gets boring, especially the foul-mouthed chef!

I think they're pretty equal but I just can't get past Gordon Ramsay and his foul mouth. Maybe it's all a put-on but he's still too abusive, imo!
