35. Great minds think alike. There is nothing more satisfying for dessert.

Back when I had money, I used to eat once or twice a month at a restaurant in K.C. that did the tableside bananas foster. I remember one time, the manager, who knew me asked the waiter to step aside. He wanted to impress me with his banana's foster skills. He put too much liquer in the pan, and when it flamed, his eyebrows were no longer there. I had to bite my lip to keep from laughing.

It is actually named Italian Cream Cake. My MIL made me one 30 years ago for my b-day & it instantly became my favorite cake of all time.

I'm too lazy to type out her recipe when I can google it. :P


INGREDIENTS:

* 1 stick margarine, (4 ounces)
* 2 cups flour
* 2 cups sugar
* 1 cup buttermilk
* 1 small can flaked coconut
* 5 egg whites, stiffly beaten
* 1/2 cup shortening
* 5 egg yolks
* 1 teaspoon baking soda
* 1 teaspoon vanilla
* 1 cup chopped pecans, or walnuts


* Frosting:
* 1 package cream cheese, softened (8oz)
* 1 box confectioners' sugar, (1 pound)
* 1/2 stick margarine, softened (4 Tbs)
* 1 teaspoon vanilla

PREPARATION:
Cream margarine and shortening; add sugar. Add egg yolks and beat well. Combine soda and flour; add to creamed mixture alternately with buttermilk. Stir in vanilla. Add coconut and nuts. Fold in egg whites.
Pour into 3 greased and floured cake pans; bake at 350 degrees for 25 to 30 minutes.

Frosting: Beat cream cheese until smooth; stir in sugar. Add vanilla and beat until smooth. Spread on cake layers; sprinkle top with chopped nuts.

This one is very close to her's, with these changes:
She never uses magarine or walnuts in her's, pecans & real butter only. She uses 1 cup of flaked coconut from bags, not canned. She also slightly toasts the pecans. That recipe doesn't show it but you need another cup of pecans for the frosting.

MrSG is a very good cook/baker, so I bought him a kitchen torch so he could make creme brulee for me. His is very good!

my grandma's blackberry cobblers were the best damn thing i ever ate in my life. If somehow a chef could somehow combine blackberry cobbler and key lime pie I would totally just never eat anything else.

I also love frozen yogurt, much more than ice cream. I eat huge portions and ice cream gives me a headache, plus a feeling I did something bad to my system. With frozen yogurt there's a creamy taste and no headache or guilt.
