Do you ever just sort of get in the mood for fried chicken?

I sometimes do.

It's weird, because when I'm asked about comfort foods, fried chicken is never it.

And yet, if I'm tired, or feeling kinda sick or down, I tend to want fried chicken. Or if I haven't had it for a month or so, I get severe pangs for it.

But my comfort food of tuna noodle casserole I can go years without, and never really pine for it. But my other comfort food, Pho with egg rolls, I tend to need once a month or more. Mashed potatoes loaded with melted butter I can go months and months without. Liver I can go without (yes, it really is a comfort food, both beef and chicken and foie gras). Chicken soup with homemade noodles - I make it twice a year or so, but can do without.

Maybe I'm just fucked up. I love fried chicken, but if you caught me sick or depressed and said "I'll give you whatever comfort food you want!" I wouldn't choose fried chicken.

And I'm not a huge fan but there are times when I crave it like crazy!
I had the best fried chicken ever in Rocky Mount North Carolina about 10 years ago-
and I STILL haven't forgotten how yummy it was!!

2. Fried chicken must have some kind of spell upon us.
Why do we crave it so?

Not any more. I used to, but about 20 years ago or so, it seems, they changed their formula and now it tastes like shit. I think they also started using crappy, cheap chickens, too.

I got a wicked craving for KFC the other day, and I never eat it.

I went there and got take-out, brought it home, and had my way with a sexy 3 piece meal. And damn. it was good. :P

5. Yup.
There's a local store near the place we've gone my whole life in the summers... it used to be Chickadee chicken, and changed hands at least once, but I still crave Chickadee chicken, and we still get it most weekends that we go down there, even though it's not as good as it used to be.

Around where I live the Mexican places are where to get it. Also, there's one grocery store on the way to where we often picnic that has GREAT fried chicken. I prefer it cold.

As a kid we had fried chicken many Sunday noon dinners. Homemade with mashed potatoes and sweet corn was heaven. Throw in an apple or groundcherry pie and it was out of this world. Might have to get me some soon.

10. One of the best things about fried chicken
is that, properly prepared, it doesn't have all that much added fat from the frying process. Alton Brown proved that on Good Eats.

That said, give me a nice fried chicken chest, um, er, breast, and I'm a very happy camper.

And when I"m in the mood, it doesn't even have to be particularly good. Hence my occasional forays into KFC or Popeye's. My local supermarket also sells fried chicken from its deli counter, either à la carte or in bags of 8 or 12 pieces. But there's nothing better than really good fried chicken like my NC mama used to make!

15. I'm like that with ice cream...
I have a massive sweet tooth and can put away the candy, cookies, doughnuts, cake, pie,...er...boxes of sugar cubes...but rarely eat ice cream. However, when the infrequent craving hits, I must have it.

As a matter of fact, I've got a craving for it tonight. I won't have it...I'm saving it for later this week...but I could really go for some fried chicken, mashed 'taters, pan gravy, corn and biscuits.

And lemon meringue pie.

*sigh*

I think that it's because I know I'm making it for Wednesday -- but I want it NOW.

It's all gone already. It was REALLY good - I went nuts and fried it in bacon grease (don't tell anyone, please).

Must have been wonderful!!

I love frying stuff in bacon grease. Like spinach. Or beans. Or steak. Or eggs. Or starting off my soup with sauteeing the onions in bacon grease...

But, gods, I've never had chicken fried in it - I'd love to try that! Did you deep fry it in fat? Or that southern style of fried chicken in which the fat is like a half inch in the pan?

23. I do it in a 14 inch cast iron skillet
using about 2 inches of grease, so the individual pieces are almost completely immersed. This was the first time I used all bacon grease - usually I use around 1/3 each of shortening, oil, and bacon grease. I have to say it came out really good, but I think that needs to be limited to a once or twice a year treat.

Key to frying that way is to have the meat at room temp and not overload the skillet - don't let the pieces touch.

By the time I finished (did it in three separate sessions over two days - ugh), there was some great stuff in the bottom of the pan - I could have made several gallons of tasty pan gravy!

one time actually this last year around august I was doing errands downtown and saw a KFC and I was like hmmmm CHICKEN!!! crispy recipe yum!! so I had to get some 12 pc bucket of course =)

Since I have been on Weight WAtchers I have not indulged myself in this wonderful stuff, but these cravings do come on from time to time.

Fortunately, 1 fried chicken breast is only 5 WW points, so I can do this on occasion if I have behaved myself well rest of the week.

But I could eat it every day. Some of the old ladies from my old hometown church could whip up some really seriously good fried chicken. Of course since I grew up Methodist, fried chicken was essential to any pot luck supper, along with deviled eggs, excellent pies, potato salad, and numerous strange but still enticing casseroles.

27. My Grandpa fried the BEST chicken
He breaded it and fried it in peanut oil and did it that way for probably 50 years. He was 91 when he died, so evidently it didn't hurt him to eat it!

<sigh> I miss him.

I have thought about trying to recreate his chicken, although I have never fried it period. I just seasoned a cast iron skillet and bought some peanut oil to try it. I watched him do it hundreds of times (he fried it for Masonic Lodge events), so I'm fairly sure it will be edible. We'll see!
