Burmese Chicken curry...It's what's for dinner

Grandpa Rollins famous Burmese Chicken Curry

2.5 large white onions - chopped
I cup peanut oil
2 Tbsp Turmeric
I Tsp chopped fresh ginger
3 cloves garlic
I Tsp ground cumin
1 Tsp ground coriander
Chili powder to taste

3 Lbs. Chicken (I use boneless/skinless thighs and breasts)

Heat peanut oil on medium heat. Add onions, garlic and ginger. Cook slowly(do not burn) until onions are transparent.

Add all dried spices and stir/cook for 1 minute.

Add chicken and stir for 1 minute.

Add water to cover.

Turn down heat to slow simmer/low and cook gently until oil rises to the top. (approx 2-3 hrs)

Skim oil and serve over rice...with mango chutney and ice-cold beer....

If you like you can add small red or chopped potatoes to absorb water
