1. Red Beans and Rice is a Monday New Orleans tradition.

I've heard differing explanations as to why -- I've heard that Sunday dinner is a big production, so beans and rice is cheap and easy...or that Monday is wash day, and back when laundry was a whole-day affair it made sense to have a pot of beans and sausage simmering on the stove.
