She wants an excellent Vegetarian cookbook with the key being simple recipes. Is there one down at my local Borders or Barnes & Noble? I don't have time to order one.

Why not go with the dinner, flowers, and jewelry approach? Maybe a day-spa, or a special weekend at the local lake.
I know this doesn't help if you really need to get her the cookbook. But I have a severe aversion to getting a girlfriend/wife something that is related to household activities.

go ahead and get a cookbook.
For my birthday last year, I asked for (and got) a big-ass great cookbook, The New Best Recipe, by the America's Test Kitchen peeps. And this year, there are a couple more cookbooks I want. I'm not the spa type.
