There are those who call Kraft processed cheese food product on Wonder bread "grilled cheese"
They are less than the dust beneath my chariot wheels.
A good light rye bread, possibly with caraway seeds (a matter of taste), a thin slice of medium old cheddar, a thin slice of Spanish onion (there are those who prefer Vidalia; dilletantes I call them) followed by a second thin layer of cheese.
Accompanied by a thin tomato soup seasoned to taste with black pepper and your bevvie of choice (wobbly pop works well) it a repast fit for Valhalla.
IMO.

grilled cheese with either provolone or muenster? Or both, if you're feeling inclined.
I never make grilled cheese with those yellow plastic slices anymore. And I've gotten the timing down to a science--I never burn the bread.
I think I may have this for lunch. I like to dip mine in ketchup or salsa.
