Hey foodies! How long would you marinate a flank steak? |

I'm grilling some to top our salad for dinner. Right now it's marinating away in a garlic/olive oil marinade. How long should I leave it in there?

That's how you tenderize meat. The acids break down the fibers that make a cut like flank steak tough. :shrug:

marinated for 2 hours. just ate dinner: baby arugula with fresh local tomatoes, green onions, cucumber, avocado and blue cheese, topped with flank steak. served with cheddar biscuits and a nice Australian cab.
