Yellowtail - Please Advise |

No, not the wine.
I caught a yellowtail yesterday in Mexico. Awesome. Had sashimi last night, but have lots of fillets left. How should I make them? Please advise. :hi:

Seriously, I've pan-fried yellowtail in butter, and it's really good that way. I would guess broiled and also smoked would be good.
