I don't want it dried out but I want it done and not bloody. The worst cooked burger I had was at a Hard Rock Cafe. It was charred on the outside and almost raw in the center.

For health reasons (nasty e-coli and listeria and such). For steaks though, medium to medium well. And please no tar-tar, sushi, or raw anything.

state law prohibits eateries from serving rare burgers - :sigh: - all you can get is a hockey-puck on a bun

so I don't order burgers in the restaurants - make them at home and the way I like them

1. make a "grilled cheese sandwich"
2. fry up a burger in a pan with sautee onion
3. open up the grilled cheese sandwich, add the burger and onions
4. garish to taste
5. eat it

24. Burger:Well Done. Steak: Medium Rare
Burgers should always be well done due to health reasons. The reason for this is because with ground beef, you don't know which part of the ground beef has been exposed to open air contact. WIth a steak, you can just cook the outside and be safe, cause the ourside is the only part that's been exposed to the air.

Mad Cow's bad enough thanks, don't need to bring E.Coli and other assorted disease.

To minimise risk of nasty bacterial infections, the thing to do in order to have a nice rare hamburger is to go to the store, buy a decent-size sirloin steak, sear it in a cast-iron skillet so that the exterior is definitely bacteria-free, then put it in a meat grinder, make burgers out of the result, and cook to taste. Especially recommended for anyone who likes less-than-well-done burgers but won't eat 'em out of paranoia.


And steak I like blood rare, cold in the middle. Grilled or pan-fried with a crust of about an eighth of an inch on the outside. When I eat meat, I want it to taste like meat. Not like leather or charcoal.

26. Close to high and let it fry
My nana made the best burgers that way, right after school when I was in junior high. I could hear the glorious sizzling when I dumped the bike and walked into the house.

Actually I voted medium well. But please no juices at all. The only burgers I can't stand are the thick restaurant type that some places consistently undercook, even after the e-coli episodes and regardless of how you order it. Last summer in Miami I sent back Ale House burgers during six different visits, usually blood red even when I emphasized medium well.

Plenty of relish, thank you. Ketchup, lettuce and onions on a sesame seed bun.
