Homemade baked beans tonight |

I started them slow cooking last night just before bed and the house smells delightful. :9

An onion cut up. Some dry mustard, a little white pepper, a bit of salt. Maple syrup and molasses. Pretty simple really. Very yummy. :9

5. here's a recipe for how we make them in Boston |
|
After sorting through the beans I put them on the stove top covered in water and add 2 tbsp. baking soda. When it foams up, I drain and rinse them. (This just helps to take some of the gas-i-ness out of the beans)
Then into a beanpot w/
1/2 lb. block of salt pork (fatback) cut into cubes 1 whole medium to large onion, chopped 2 tsp. ground mustard 1/4 cup light brown sugar 1/4 cup molasses one pinch (literally a pinch) ground ginger and ground clove salt & pepper to taste
once they're in the beanpot, you COVER them w/ water.
bake 3 to 3.5 hours on 350.
beans should not be mushy. Slightly firm

Baked beans contain maple syrup. :P
(I'm a Vermonter - everything contains maple syrup. Oh, and I forgot to mention the ginger in my post - clove's a good idea, I'll toss some in next time)
