What can I do with cucumbers????
I only planted 3 plants but I have dozens and dozens of cucumbers and more coming. It must be the composted steer manure I used. Does anyone have a recipe using cucumbers other than a traditional salad? I know, I should make pickles but I don't know how to do that yet. I thought of cutting them up and adding a sweet onion and some goat cheese and balsamic vinegar dressing. How does that sound?

2. Gyro sauce

1 large cucumber
1 T. olive oil
2 t. white vinegar
2 cloves garlic, crushed
1 c. plain yogurt
1 T. dill weed
1/2 t. salt


If you are veggie you can use the sauce over whatever veggies you want in a pita etc.

4. Clausen Type Pickles

I've been using this recipe and we love it.

Per quart jar...


Claussen Kosher Dill Pickles recipe

1 1/2 quarts boiled water, cooled
2 dill flowers
2 garlic cloves, peeled and halved
1 1/4 pounds (8 to 10) cucumbers
6 long sprigs fresh dill
1 tablespoon coarse kosher salt
1/2 cup white vinegar

Put dill flower and garlic in bottom of a Mason jar. Add the cucumbers. Put sprigs of dill in center of cucumbers. Add salt and vinegar, then fill jar with boiled water that is now cool to within 1/8th of top. Put on seal and ring. Shake to dissolve salt. Set upside down on counter away from sunlight and heat. Let sit 4 to 5 days turning the jar either upright or upside down each day.

Let sit upright 2 more days, then refrigerate. Lasts about 6 months.

Enjoy!

8. Great way to use cucumbers...
Peel and thinly slice the cucumber and one onion. Put them in a bowl and add vinegar, salt, and a little olive oil.

Eat when cold.

This is so good and really nice on a hot day.

mixed with light sour creme...sprinkled with dill or

thinly sliced and covered with a mix of water, rice vinegar, and a
bit of sugar to taste. Chill before serving. p

your salad sounds good too. Cut them in "sticks" (especially if they are getting too big and seedy - this makes them easy to remove) and use them to dip ranch dressing or such

Pickles are pretty easy, did you grow any dill? I have a good recipe that uses seeds instead of fresh dill, but they are expensive.

13. Cucumber Soup
Soup made from scratch doesn't get much easier than this. Just blend, season and chill! Hothouse (also known as English) cucumbers have very small seeds and are sweeter in taste and firmer in texture than regular cucumbers.

* 4 green onions, trimmed and chopped
* 1 garlic clove, pushed through a press
* 1 medium hothouse cucumber, peeled, seeded and sliced
* 1/2 teaspoon dried tarragon
* 1 can (14 1/2 ounces) reduced-sodium chicken broth
* 1 tablespoon fresh lemon juice
* 1 cup buttermilk
* Salt and pepper
* 1/4 cup chopped fresh parsley

1. In a blender, combine all ingredients except parsley. Puree until smooth. Add salt and pepper to taste. Chill 1 hour. Garnish with parsley before serving.


Note: I use what ever cucumber is available, just peel and seed.

18. Cold cucumber soup is great!
I make mine with plain yogurt sometime too. Garnish with some fresh diced tomatoes (which there should be lots of about now too!)

Also, black bean salad:
cooked, cooled, drained black beans
peeled & diced cukes
diced tomatoes
chopped onion
fresh parsley if you have it - dried if you don't

Dress with:
olive oil
lemon juice ( I love lemon so I use 2 parts lemon juice to one part oil, more or less ;) )
fresh pressed garlic
some dried mint
dried dill
bit of salt

Pour over the beans and veggies. Chill a couple hours then add crumbled feta and olives if you like.

WONDERFUL summer meal!

Your idea with goat cheese would work better if you added tomatoes, IMHO. Cukes and tomatoes are a natural pairing. Try making a salsa with seeded and diced cukes, a ripe peach, red onion, and cilantro and a lime vinaigrette.

Chinese style cuke salad -- peel and cut in half lengthwise one large cuke. Scrape out the seeds and slice into half moon shapes. Toss in a dressing of 1 Tbls soy sauce, 1 Tbls rice or other mild vinegar, 1 Tbls Asian toasted sesame oil, 1 teas chili oil or hot sauce, 1 /2 teas sugar, and one finely minced clove of garlic. Refrigerate overnight.

Another Chinese idea is noodle salad.

1/2 lb of Chinese fresh yellow noodles or thin spaghetti
1 Tbls vegetable oil

1 cuke
3 cups fresh bean sprouts, trimmed
1/4 cup creamy natural peanut butter or tahini
1/4 cup warm water

3 Tbls soy sauce
2 Tbls cider or wine vinegar
1 Tbls Asian toasted sesame oil
1 teas sugar
(some chili oil to taste)

Prepare a cuke as above, set aside.

Mix water and peanut butter until smooth, the add the soy,vinegar,sesame oil, chili oil, and sugar.

Heat the water for the pasta. Blanch the sprouts for a few seconds then immediately drain and cool.
Add the pasta to the pot, cook, drained and tossed with the vegetable oil.

Toss the cukes and sprouts together and put them in a wide deep bowl. Add the noodles on top, then the peanut butter dressing. Now toss everything together and serve.

An old fashioned cucumber sandwich is another idea, using the goat cheese mixed with some herbs and a little lemon.

Freezer Pickles

15 medium size cucumbers (not peeled) sliced 1/8" thick
8 medium onions sliced
1/2 C. salt
Water to cover
5C. sugar
1 1/2 pints white vinegar
2 or 3 cloves garlic chopped

Combine cucumber and onion slices. Cover with salt water, cover and put in refrigerator for 48 hours. Mix sugar, vinegar, and garlic. Bring to a boil, then cool. Drain pickles well. Pack loosely into containers and pour syrup over, leaving 1" headspace. Freeze.

To thaw, set in refrigerator overnight.

Good in salads.

(There never seems to be enough syrup to cover the pickles following the recipe. Maybe it depends on what size "medium" cucumbers and onions are. I usually have to make more syrup.)

26. Cucumber and yogurt dip.
Grate cucumbers (or slice very thin), salt and cider vinegar.
Cucumber sandwiches...with white bread (no crusts) and a bit of mayo.

Thick slices for on your eyes while you take a relaxing bath. (Helps reduce puffiness)

And find some recipes for pickles. They aren't that hard to make and are usually so much better than anything you'll find in a store.

4 cucumbers chopped
2 shallots finely minced
1 TBSP chopped coriander
2 Thai chili peppers finely chopped
1/4 TSP sea salt
2 TBSP sugar
1-1/3 CUP rice wine vinegar

Combine salt, sugar and vinegar and simmer together over medium heat until sauce thickens a bit. Let sauce cool. Pour cold sauce over cucumbers, shallots and chilis. Sprinkle the coriander on top.

three plants, growing up a stick tee-pee. It's exciting when they start growing but one cucumber goes a long way with me. I've been peeling them and cutting them in chunks and sitting them on the counter in a bowl of vinegar, salt and a little oil to snack on. But I can only do one a day and if the ones starting out there grow then I don't know what I'll do with them.

Simple and awesome. Here's a recipe for one with crab:

You can make it without any meat, add shredded nori or pickled ginger. The sweet/sour/salty flavor combination really complements the cucumber.

1 Tomato sliced
1 cup Feta cheese (preferrably herbed)
Olive oil
Salt
Pepper

Arrange slices on plate, crumble cheese over slices, drizzle olive oil, salt, pepper, enjoy.
