8. MMMM.. fresh white corn tortillas made at the local market...

Make sure your tortillas are fresh; the corporate/commercial tortillas are okay, but if you have access to hand-made, those are soooo much better.

Put 1/4 cup canola oil in a 12" cast iron skillet, heat skillet on high until water "skips" above the oil. Bring flame down to medium to stop oil from scorching. If you want more of a grill than a fry, use 1 tablespoon of oil and coat the bottom of the skillet.

Place 3 corn tortillas half in the skillet bottom, half up on the sides. After 1/2 minute, the tortillas should still be flexible, but start to fry. Turn the tortillas around (still sitting half up) so the oiled side is up against the side of the pan. Sprinkle kosher salt on tortillas. Put filling on portion on the bottom of the pan - I use about 2 tablespoons of either pinto or refritos (refried beans)and salsa mix, then add cheese and chopped leftover meat (roast beef, pork, chicken, tuna...).
Let sit for 1 minute, with tongs, take the bottom of tortilla, flip so that the upright side is on the bottom of the skillet. If you didn't overfill, the filling will stay and the tortilla will be a nice taco shape.
Keep grilling until the underside is crispy, flip again and grill the other side. Remove, "drain" on paper towels or a fry rack until cool enough to eat. Add shredded lettuce or cabbage, sour cream, guacamole or whatever other condiment you like with your tacos.

with real butter and salt :popcorn:

although the taco lovers reminded me that I can ALWAYS make and eat any kind of quesadilla, night or day. (tacos are a hair too much work, although microwave enchiladas are pretty fast and easy)

In the winter, I love oatmeal for supper. It just warms ya up after being out in the cold. And it makes a great late night snack any time of year!
