When I was in Florida for the first time, I was served grits with my breakfast and asked the waitress what I'm supposed to do with them. She looked at me as though I had two heads. Southerners don't understand that Northerners don't eat grits. It looks kind of like oatmeal and so we want to put milk and sugar in it.

Cheese grits. I set a plate of cheese grits topped with a sunny-side up egg and a couple strips of bacon in front of a friend on a camping trip in Mono County. She ate them, with moderate grace. I loves me some grits, but then I was raised in the south and have eaten them all my life.
Good quick (unbaked) cheese grits:
Fry a couple of strips of bacon for each serving of grits. Reserve the fat.
Cook grits according to package directions. Add salt and LOTS of black pepper to taste, then stir in a tablespoon or so of bacon fat for each serving. Add a cup or more of grated EXTRA SHARP WHITE cheddar cheese for each serving, e.g. Vermont Cabot. Stir to melt cheese and blend. Serve hot.
This makes an excellent base for shrimp and grits, etc.
