1. Cool by me
I love liver and onions. As a working class mid-Atlantic from impoverished New England roots I grew up on such fare. My mother made liver quite often and it was good, smoothered with onions with a generous dolop of ketchup. Loaded with vitamins too. And some potatoes on the side.

My father's midwestern roots in sausage making made us actually make Head Cheese, every New Years. My dad got a Hogs Head and cooked it and made Head Cheese out of it. I never cared that much for Head Cheese, but he loved it as did some of my brothers.

10. Liver and onions. Pick out the onions and push aside the liver.
At least that's what I tried to do when I was a kid. I think that's easier than picking apart the head cheese.

The same cannot be said of the head cheese. :puke:

On the other hand, my favorite all-female New Orleans blues band from around 1990, Blue Sister, had a staple song "Everything On a Hog Is Good", which was at least in part about head cheese. Even if liver and onions boasts its own song, it does NOT have "Sticky T." for its drummer. :loveya:

There's nothing better that a good piece of liver (not overcooked!) with vidalia onions gently and lovingly caramelized in butter over a 20-minute period. The onions and liver look a bit overcooked in your picture. I'll have the head cheese for dessert. :9

The only vegan I've ever known who was not inclined to lecture people on the merits of veganism was a co-worker a couple of years ago.
Once day, since we often shared the lunchroom due to our schedules I asked her why she was not like the 50 other vegans we worked with. she said, "Mulsh when I ate meat my favorite meat was...headcheese." and " When I go home to the farm in Maine I still have to help my dad make it sometimes."

The first job I landed after being a cook for 6 years was as a lab aid at the county Coroner's office. As a cook I had finally developed a taste for liver and onions. All through my first week at the Coroner's lab I was looking foreword to cooking myself a nice liver and onion dinner. I planned to do this over the week end.

The first regular task I was assigned as a lab aid was preparing the human liver samples for drug and alcohol screens, a test that was performed over the weekend since it took about 48 hours to complete. Also bare in mind that a healthy human liver is remarkably similiar in color and texture to a healthy cow's liver.
That first weekend I found some really nice beef liver, took it home and cooked it. As I cooked it I kept thinking about the human livers from the previous day. As I took my first bite I knew that I'd never eat or cook liver & onions again. I ended up throwing the whole thing out and going to a chinese restaurant that night.

is gross, liver looks uncooked and greasy, bleeech.

Actually used to cook a lot of liver. If you cook bacon first and cook the liver in bacon drippings, it can be tastey.
